Slow Cooker Root Beer Chicken Sandwiches:

This Slow Cooker Root Beer Chicken is one of our favorite weeknight meals. It’s so simple and everyone just loves it! 

I also like to cook pulled chicken for a crowd because it’s so easy and doesn’t cost a fortune. My kids love it too because they love anything with Root Beer in it!

The flavor is amazing and we just love how the root bear tastes with Sweet Baby Ray BBQ sauce. That is our favorite around here. The entire meal is just so easy and it helps during a busy week of school, work and activities.

You will need a crock pot!

If you don’t have a crock pot yet or need a new one, I love the programmable crock pot. It is perfect for when I am am not at home. You can set it for the amount you need and leave the house for the day.

It will cut off for when you programmed it. A programable crock pot makes dinner time so easy. It is so convenient walking in from a long day of work to dinner being ready to eat!

However, any crock pot will work great for this recipe.

Ingredients to make Root Beer BBQ Chicken

Ingredients:

You only need a few easy ingredients to make this simple slow cooker root beer chicken and I bet you already have some of the seasonings in your pantry!

  • Chicken Breasts
  • Onion Powder
  • Garlic Powder
  • Chili Powder
  • Salt and Pepper
  • Root Beer
  • Barbecue Sauce (We prefer Sweet Baby Rays)

How to make Crock Pot Root Beer Chicken:  

First place the chicken breast in the crock pot. Then combine all the dry ingredients (seasonings) together in a small bowl and sprinkle this mixture on each chicken breasts.

Next pour over the chicken the Root Beer and barbecue sauce into the crock pot.

Then cover and cook on low heat setting for 6-8 hours or cook on high for 3-4 hours. After the cooking time, remove chicken, shred it and return it back to the sauce in the crock pot to cook for another 30 minutes.

The cook times will vary based on the crock pot you use for this recipe, so make sure you adjust the cook time accordingly based on your slow cooker.

After this time, the chicken is ready to serve on hamburger buns for a delicious sandwich. You could also use slider rolls for parties. 

If you can toss a few ingredients in a crockpot then you can make this dinner. It really is that simple to make!

Toppings!

Some of our family likes it plain (with more BBQ sauce poured on top) but I just love it topped with The Best Coleslaw Recipe! It’s so good with the shredded chicken.

If you like slaw, you have to try this recipe. It’s amazing on these sandwiches!

Also if I have time, I will toast the bun. Some of my kids like cheese on it and its even better melted. This recipe is a hit with all the kids and really the entire family. Yeah!

Serving ideas:

I usually serve this recipe on buns or sliders but this recipes would also be great served over mashed potatoes or rice. Here are some of our easy recipes to make these easy sides to serve with this root beer bbq chicken.

Substitution Ideas:

If you don’t have any root beer on hand or you just don’t like it, this recipe is great with any dark soda. You can use a Coke or a Dr. Pepper and it would be delicious in this recipe.

Also, make sure to use your favorite type of BBQ sauce for these bbq chicken sandwiches. As I already stated, we love Sweet Baby Rays but any will work great in this recipe. You can also use a sugar free barbecue sauce to reduce the carbs if you are following a low carb diet.

In addition, I generally use boneless skinless chicken breasts for this recipe but boneless chicken thighs would be delicious in this recipe as well.

Ingredients

  • 2 lbs Boneless Skinless Chicken Breasts (approximately 4 chicken breasts)
  • 1 Tbsp onion Powder
  • 1 Tbsp Garlic Powder
  • 2 tsp Chili Powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 cup Root Beer
  • 1 cup Barbecue Sauce

Instructions

  • Place the chicken breasts in a 6 quarter crock pot. Combine the dry ingredients in a small bowl and sprinkle over the chicken breasts in the crock pot.
  • Pour the Root Beer and barbecue sauce in the crock pot.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Shred the chicken and mix into the sauce in the crock pot.
  • Serve on top of your favorite buns and enjoy!

Can you freeze this recipe?

The short answer is YES, you can definitely freezer this recipe. You can turn this into a freezer meal and freezer before cooking and you can also freeze your leftovers for another quick and easy dinner or lunches.

To turn this recipe into an easy freezer meal, toss all the ingredients (raw) into a freezer bag and freeze. Then just place these ingredients in your crock pot frozen and cook on low for 8 hours until the chicken is shreddable. It really is that easy!

Or you can cook it and then freeze your left overs. In the past, I have doubled the recipe so I would have some leftover to freeze.

I like to freeze the left overs into my silicone cupcake pan. About ½ cup for each sandwich is the perfect size. Just pop them out and place in a freezer bag once frozen. Then I have individual sandwiches ready for an easy dinner idea or for lunch ideas.

This is perfect for those nights not everyone is home and you just need a few individual servings. The slow cooker is amazing for busy nights.

    Made this one because we love root beer and have tried root beer flavored barbeque sauce. It wasn’t as flavorful as I had hoped, but still a good recipe! Needed a little more root beer flavor for my picky family.
