Teriyaki Chicken on a Stick

We love this for a quick meal. It’s nice to have something on the regular menu plan rotation that I know everyone will eat.

These chicken skewers are full of flavor and taste much better than getting takeout. I love that I know exactly the ingredients we are adding. Save time and money and grill your chicken on a stick.

What is a chicken on a stick?

This recipe is so simple and it’s truly just chicken on a stick. It is just that simple. We love creating easy recipes with easy ingredients.

We like to serve with extra BBQ sauce on the side for dipping. The kids love them. They thought it was so cool to eat chicken on a stick.

What kind of skewers to use:

When you are preparing you chicken on the stick, you need bamboo skewers. I used wooden ones but you can use metal skewers as well.

If you use wooden ones, soak them in water before you use them. This will prevent them from burning to fast on the grill.

Ingredients needed  - chicken tenders, brown sugar, soy sauce, rice wine vinegar, honey, minced garlic, ground ginger, pepper, cornstarch

Ingredients for Teriyaki Chicken on a Stick:

  • Boneless Skinless Chicken Tenders 
  • Brown Sugar
  • Soy Sauce
  • Rice Wine Vinegar
  • Honey
  • Minced Garlic
  • Ground Ginger
  • Pepper
  • Cornstarch

How to make Chicken on a Stick:

  • Mix together Teriyaki Marinade – Mix together the ¼ cup of brown sugar, soy sauce, rice wine vinegar, honey, garlic, ginger and pepper together in a medium size bowl.

  • Marinade the Chicken – Reserve approximately ½ cup of the this mixture and then use the remaining mixture to marinade the chicken tenders by placing the chicken pieces in a gallon size bag or a large bowl and pour the remaining sauce over the chicken.
  • Continue Marinating Chicken and prepare skewers – Allow the chicken to marinade for at least 30 minutes but you can marinade it for up to 8 hours. While the chicken is marinating, soak the wooden skewers in cold water for at least 10 minutes.  
  • Prepare Grill – Preheat the grill to medium heat. Spray the grill grates with a non-stick cooking spray or brush with oil.
  • Put Chicken on Skewers – Thread the chicken tenders on the skewers the long way.  I was able to put 3-4 chicken tenders on each skewer based on the size of the chicken.

  • Grill Chicken Skewers – Grill the chicken thighs for approximately 5-7 minutes per side until the chicken reaches an internal temperature of 165 degrees F.

  • Heat Teriyaki Sauce – While the chicken strips are cooking, mix the remaining sauce with the cornstarch. Heat this mixture in a sauce pan over medium high heat, whisking constantly until the mixture has thickened.
  • Add Teriyaki Sauce to cooked chicken – Brush this sauce over the grilled chicken when serving and enjoy!

  • Serve and Enjoy – Garnish with green onions and sesame seeds. Serve over rice and enjoy!

What to serve with Chicken on a Stick?

There are many things that we serve with this recipe. Here are some of our favorites:

  • White Rice
  • Green Salad
  • Grilled Corn on the Cob

Can you use other Chicken?

Yes, you can use other types of chicken. If you use chicken breast, I would cut the chicken so that you can easily put on the skewers. Make sure the chicken is even, so it cooks evenly.

Marinating Chicken Thighs in the teriyaki sauce and then grilling is a great option.

Variation ideas:

  • Use different marinades – Any marinade you use on this chicken skewers would be so good. You can also marinate the chicken first for different flavors. We have a delicious Easy Italian Chicken Marinade that is awesome with this chicken sticks.
  • Change the chicken – This teriyaki marinade sauce is great for marinating chicken breast or chicken thighs.
  • Add Vegetables – Make a chicken and vegetable kabob. These are so good and easy to make. We love to add sesame oil when we are making the chicken and vegetable kabobs.
  • BBQ Sauce Marinade – BBQ Chicken Marinade- Has only 2 Ingredients and would be great to marinade the chicken in.

Recipe Notes

*Refrigerate any leftover chicken for up to 5 days. 
*You can also make this recipe with chicken breasts or chicken thighs instead.  Just cut the chicken into strips before placing them on the wooden skewers.
