Ingredients

Ingredients, cream cheese, fresh strawberries, powdered sugar, vanilla extract, graham cracker crumbs

We love that this simple dessert only requires a few ingredients. You can even use store-bought cream cheese and skip the graham cracker crumbs to save even more money.

  • Strawberries – We like using large strawberries that fresh and bright red
  • Cream Cheese – Softened at room temperature. We recommend using full-fat cream cheese instead of lite cream cheese. Do not use tub style cream cheese.
  • Powdered Sugar – Adds the perfect sweetness to the cream cheese mixture
  • Vanilla Extract – Pure vanilla extract has the best flavor
  • Graham Cracker Crumbs – The graham cracker crumb topping is optional. These strawberries are delicious without this topping as well.

Recipe Tips

  • Strawberries – Make sure to choose strawberries that are fresh and have a bright red color. Since this is the main ingredient you want to choose the best strawberries that you can find.
  • Combining Cream Cheese Filling – Mix ingredients until combined. Make sure to not overmix so the mixture remains fluffy.
  • Piping Bag – We find it easiest to fill the strawberries by filling the cream cheese filling in a piping bag or pastry bag. But you can also place the filling in a ziploc bag and cut off the corner to add the filling. Let the kids help fill the strawberries — perfect for little hands and fun kitchen time!

These Cheesecake Stuffed Strawberries are delicious with your favorite toppings. Try these variations for an easy addition.

How to Store & Make-Ahead

  • Make Ahead – You can prep the cheesecake filling up to 24 hours in advance. Store it in an airtight container or a piping bag in the fridge. For best results, wait to fill the strawberries until just before serving so they stay fresh and firm.
  • Storage – Leftover stuffed strawberries can be stored in an airtight container in the refrigerator for up to 2 days. Note: the strawberries may soften and release moisture the longer they sit.
  • Freezing Not Recommended – Due to the high water content in strawberries and the creamy filling, freezing is not ideal as it can change the texture.

FAQ

What is the Best Way to Hollow Out Strawberries?

To prepare the strawberries so you can fill with the cheesecake filling, you will need to hollow out the strawberries. To do so take a paring knife and in a circular motion remove the center of the strawberry.

Can I Use Frozen Strawberries?

Fresh strawberries work best for this recipe. Frozen strawberries tend to release too much liquid when thawed and may become mushy, making them hard to fill and serve.

Can I Make Low-Carb or Keto Friendly?

Yes! Use a sugar-free sweetener in place of powdered sugar and skip the graham cracker topping. Just make sure your cream cheese and vanilla extract are keto-friendly.
