No bake desserts make it much easy to make something sweet for my family. Strawberries and Cheesecake is the perfect combination and we love that they are easy to serve with the graham cracker topping.

Ingredients

Ingredients, cream cheese, fresh strawberries, powdered sugar, vanilla extract, graham cracker crumbs
  • Strawberries – We like using large strawberries that fresh and bright red
  • Cream Cheese – Softened at room temperature. We recommend using full-fat cream cheese instead of lite cream cheese. Do no use tub style cream cheese
  • Powdered Sugar – Adds the perfect sweetness to the cream cheese mixture
  • Vanilla Extract – Pure vanilla extract has the best flavor
  • Graham Cracker Crumbs – The graham cracker crumb topping is optional. These strawberries are delicious without this topping as well.

  • Blueberries – This is a great idea to celebrate Memorial Day or July 4th. We have even topped with other type of berries.
  • Mini Chocolate Chips – Adds a delicious chocolate flavor for the perfect combination.
  • Sprinkles – Add fun sprinkles for the holiday your are celebrating.
  • Heavy Cream – Add ¾ cup of heavy cream for a great creamy addition.
  • Chocolate Sauce – For a delicious addition, drizzle melted chocolate or chocolate syrup over the top before serving.
  • Crushed Cookies – Substitute the graham crackers with vanilla wafers for an easy substitute.

How to Make Cheesecake Stuffed Strawberries

Step 1 – Clean the strawberries. Cut off the stems and top of each of the strawberries.  Core each of the strawberries with a paring knife and set the strawberries aside.

Step 2 – In a large mixing bowl, beat together the cream cheese, powdered sugar and vanilla extract with a stand electric mixer or hand mixer until light and fluffy.

Step 3 – Pour the no bake cheesecake filling into a piping bowl fitted with a star tip and pipe the mixture into each strawberry.

Step 4 – Sprinkle with the graham cracker crumbs and enjoy!

Recipe Tips

  • Strawberries – Make sure to choose strawberries that are fresh and have a bright red color. Since this is the main ingredient you want to choose the best strawberries that you can find.
  • Combining Cream Cheese Filling – Mix ingredients until combined. Make sure to not overmix so the mixture remains fluffy.
  • Piping Bag – We find it easiest to fill the strawberries by filling the cream cheese filling in a piping bag or pastry bag. But you can also place the filling in a ziploc bag and cut off the corner to add the filling.

What is the Best Way to Hollow Out Strawberries?

To prepare the strawberries so you can fill with the cheesecake filling, you will need to hollow out the strawberries. To do so take a paring knife and in a circular motion remove the center of the strawberry.

Can I Make Ahead of Time?

Yes, you can make up to 24 hours ahead of time but we recommend making them the same day that you are serving them. For best results, make the cheesecake filling and then when ready to serve pipe the filling into the fresh strawberries for the best treats.

How to Store Leftovers

Store the leftovers in an airtight container up to 2-3 days in the refrigerator. The strawberries may get mushy and dull while stored in the fridge.
