  • Drain the beef thoroughly. Any excess grease pooling under the cornbread topping will make the bottom layer greasy and prevent the cornbread from baking evenly
  • Do not overmix the cornbread batter. Stir just until the wet and dry ingredients are combined — overmixing makes the topping dense and tough instead of light and fluffy
  • Check at 35 minutes. Every oven is different — start checking early and pull it when the toothpick comes out clean and the top is golden brown
  • Let it rest before serving. Ten minutes of resting allows the filling to set so the casserole holds together when scooped instead of falling apart on the plate

    I love this recipe. We did switch it up a little differently but it was easy to use what we had at home. Instead of diced tomatoes, we used salsa. We also didn’t use black beans but we did add chili beans. I went the super easy method for the cornbread and used Jiffy. I would suggest using 2 boxes instead of 1. We also added some honey and shredded cheese to the batter. It was amazing. Simple and easy recipe to follow just as is ot change it up a bit. I recommend ?

    When I prepare it I just use the Jiffy cornbread mixture and I add in 1can or creamed corn and instead of using the can corn that tastes like plastic, I always use thawed out frozen corn because it’s already cooked blanched before freezing and the corn quality is by far way better and also tastes way better
