I love making homemade bread for many occasion. This Oatmeal Bread is one of our favorites because of taste, texture and how easy it is to make. Make this bread for the holidays as a gift or for your holiday dinner.

Having homemade bread available for my family is one of my favorite things. This recipe can be made with a variety of additions and it is even delicious with toast and butter.

We also love how easy it is to prep and we recommend making two so one can be placed in the freezer.

Ingredients

Ingredients required to make the recipe including rolled oats, butter, milk, warm water and more.

For the Bread

  • Rolled Oats (not quick or instant oats) 
  • Butter (softened) 
  • Milk (boiled to a low simmer) 
  • Warm Water 
  • Active Dry Yeast 
  • All Purpose Flour 
  • Honey 
  • Salt 
  • Large Egg (room temperature) 

For the Topping

  • Large Egg 
  • Water 
  • Rolled Oats

Variations Ideas

  • Flour – Make this bread with whole wheat flour as a healthier option. White flour is what we used but you can also make it with a gluten-free options or use bread flour.
  • Additions – This oat bread recipe is a base recipe so feel free to add in some of your favorite ingredients. Add in a teaspoon of cinnamon, ½ cup of raisins, chopped nuts, dried cranberries or chocolate chips.

Step by Step Instructions

Step 1 – Grease a 9X5 loaf pan and set aside. Pour the oats and butter into a mixing bowl.  Pour the warmed milk on top.  Stir the ingredients together and set aside until the mixture is at room temperature (1-2 hours).

Step 2 – In a separate large mixing bowl, add the warm water and yeast.  Stir and let the mixture sit for 3-5 minutes so that the yeast can begin to activate.

Step 3 – Add in the honey and salt.  Stir to combine with a hand held mixer or stand up mixer.

Step 4 – Add the oatmeal mixture and egg to the yeast mixture and beat until combined.

Step 5 – Then reduce the mixer speed down to low, slowly add in the flour until just combined.  Mix in the salt.

Step 6 – Knead the dough for a few minutes until the dough is smooth and elastic.  Place the dough in a greased bowl.  Cover and allow it to rise until it doubles in size (approximately 1 hour).

Step 7 – Carefully punch the dough down into the bowl.  Remove from the bowl to a lightly floured work surface.

Step 8 – Knead the dough slightly and then shape the dough into a loaf shape and place it in the prepared loaf pan.

Step 9 – For the topping, whisk the egg and water together and brush it on top of the loaf.  Sprinkle the dry oats on top.

Step 10 – Cover the dough in the pan with greased plastic wrap and let it rise until it doubles in size again (approximately 45-60 minutes).  Watch it closely and make sure that the dough does not rise over the top of the pan. 

 

  • Step 11 – Preheat the oven to 375 degrees Fahrenheit while the dough is rising. 
  • Step 12 – Remove the plastic wrap from the top of the pan.  Bake for 30 minutes to 40 minutes until the top of the bread is golden brown and when you hear a hollow sound when you lightly tap on the top of the bread. 
  • Step 13 – Let the bread cool in the pan for 10 minutes and then carefully remove it from the pan to cool on a wire rack until it cools completely. 
  • Step 14 – Then the bread is ready to slice, serve and enjoy!

  • Ingredients – Before combining ingredients make sure to start with butter and eggs. This helps with the overall texture of the bread dough.
  • Combine Ingredients – Combine the ingredients with a stand mixer or a hand held mixer. You can also use a wooden spoon if you prefer.
  • Oats – When making this oatmeal bread recipe, make sure to only use rolled oats. Quick-cooking oats will not work in this bread recipe.
  • Dough – Allow the dough to rise at room temperature for best results.
  • Prepare Loaf Pan – To easily remove the bread from the loaf pan, make sure to grease it and line with parchment paper. Removing the bread from the pan makes it easier to slice.

Can I Make Ahead of Time?

Yes, you can prepare this bread ahead of time. You will prepare the dough and place in the fridge in an airtight container. Do not let it rise first. Refrigerate up to one day and then remove from fridge and let the dough come to room temperature. Then proceed with the rest of the steps.

Can I freeze Bread?

Yes, this baked bread freezes great. After the bread has cooled to room temperature wrap in plastic wrap and aluminum foil. Place in a zip lock bag and freeze for up to 3 months.
