Easy Snickerdoodle Bread Recipe:

Simple ingredients is all you need to make this quick bread recipe. All the ingredients are combined easily in a mixing bowl and the poured in a loaf pan. Then a cinnamon-sugar topping is layered to give this bread so much flavor.

This is the perfect bread to prepare for the holidays. I usually make a selection of homemade bread to give out as gifts. Banana bread and zucchini bread are some of our favorites, but I have now started making snickerdoodle bread.

The cinnamon and sugar flavor makes this a family favorite. I love to eat it warm with a my coffee in the morning. You can even make these into mini loaves for the perfect gift for neighbors.

Ingredients needed

Ingredients: 

Serves: 10 

For the Bread: 

  • All Purpose Flour
  • Butter (softened) 
  • Granulated Sugar 
  • Brown Sugar 
  • Large Eggs 
  • Milk 
  • Sour Cream 
  • Vanilla Extract 
  • Baking Powder 
  • Salt 

For the Cinnamon Swirl: 

  • Brown Sugar
  • Granulated Sugar
  • Ground Cinnamon 

How to Make Snickerdoodle Bread: 

  • Step 1 – Heat Oven – Preheat the oven to 350 degrees. Spray a 5×9 loaf pan with cooking spray.
  • Step 2 – Cream Ingredients – Cream together the butter, tablespoons sugar and brown sugar. Mix with a hand held mixer or stand up mixer until smooth. 
  • Step 3 – Add In Wet Ingredients – Add in the eggs, milk, sour cream and vanilla extract.  Mix until combined. 
  • Step 4 – Stir in dry ingredients – Then stir in the flour, baking powder and salt by hand until just combined. 
  • Step 5 – Combine Cinnamon Swirl Ingredients – In a separate medium bowl, stir together the cinnamon swirl ingredients with a fork. 
  • Step 6 – Pour Batter – Pour approximately ⅓ of the batter into the loaf pan.  Sprinkle ⅓ of the cinnamon swirl mixture on top.  Continue this process until all the batter and cinnamon swirl mixture are used. 
  • Step 7 – Bake Bread – Bake for 50-55 minutes until a toothpick inserted into the center of the bread comes out clean. 
  • Step 8 – Cool Bread – Let the bread cool for 10-15 minutes on a wire rack.  Then carefully remove the bread from the pan and cool completely. 
  • Step 9 – Serve & Enjoy – Then the bread is ready to slice, serve and enjoy.

Recipe Tips:

  • Filling Pan – When adding the snickerdoodle batter to the loaf pan, make sure to not overfill it. You want to give room for the bread to expand as it bakes.
  • Preparing Loaf Pan – For best results to remove the bread, make sure to spray with cooking spray. This helps for cleanup too. You can also line the loaf pan with parchment paper.
  • Combining Ingredients – Make sure to not overmix the snickerdoodle bread batter. You want to combine ingredients until they are mixed together.
  • Cool Completely – We recommend letting the bread cool completely before slicing.
  • Check for doneness – To make sure the bread is completely cooked. Use a toothpick to check to make sure bread is baked completely. If it comes out clean then bread is baked.

Variation Ideas:

  • Mini Loaf Pans – To make this bread into smaller sizes, pour the batter into mini loaf pans. This is the perfect size to give out as gifts to friends and family.
  • Muffins – I love making muffins with this recipe. They are the perfect size to enjoy with my morning coffee.
  • Cinnamon Chips – Some recipes show the addition of cinnamon chips. They are not always available year round at grocery stores. But they do add extra cinnamon flavor to the bread.
  • White Chocolate Chips – For added flavor mix in white chocolate chips to the bread batter. You can even add in chocolate chips if you prefer. Another option would be to add in butterscotch chips or toffee chips.
  • Greek Yogurt – If you are looking for a healthier option, substitute sour cream with Greek Yogurt. You will not be able to tell the difference.

Can I Prepare Ahead of Time?

Yes, you can prepare this bread ahead of time. You can prepare the batter and bake it to give it time to cool before serving.

Another option is to prepare the batter and place it in the fridge. Make sure to cover the batter while storing. We recommend baking the bread within a day or 2.

How to Store Leftovers:

Store the leftovers in an airtight container or bag at room temperature for up to 3-4 days.  

You can also freeze the bread if you prefer. Prepare and bake the bread as the recipe indicates. After the bread has cooled, wrap the bread in plastic wrap and then foil.

Store the bread in the freezer for up to 3 months. When you are ready to enjoy, allow the bread to thaw to enjoy.

    OMG!!!! I made this for the first time for our Christmas Eve get together And it was such a hit that im not allowed to show up without it!?
    My son said “this is my new bread”!
    I did add the white chips in thw middle & on top & they pretty much melted through to the bottom forming an amazing candy like crust.
    HIT OF THE FAMILY PARTY!?????
