Butterscotch chocolate chip cookie bars make an easy dessert using a cake mix. Each bar is gooey and delicious with tons of butterscotch and chocolate chips.
I really love butterscotch and it is so decadent combined with chocolate. These little bars might just be my new favorite dessert. Did I mention the recipe uses a cake mix?
Yes! It is so very easy to make! This can be whipped up in hardly any time at all for an amazing treat.

I know I am lazy! All that scooping and stuff can be time consuming. 🙂 Remember, I am not a very good baker!
So I thought why not make cookie bars? This is the perfect solution when you want the taste of cookies but without all of the scooping.
You only need a few ingredients to make a delicious dessert! If you can mix everything up in a bowl and dump it into a pan, then you can do this.
Even the non-baker like myself can handle this baking. Haha!

Ingredients
- Yellow Cake mix
- Vegetable Oil
- Eggs
- Butterscotch Chips
- Chocolate Chips
How to make butterscotch chocolate chip cookie bars
First, preheat oven to 350 degrees.
Combine all the ingredients in a mixing bowl. The batter will be thick but this is normal.
Fold in the butterscotch chips.
Spray the 9×13 pan with nonstick cooking spray. Press the batter into the prepared baking pan – you will have to press it out.
Bake for 20 to 25 minutes. Allow it to cool slightly before cutting (or they will fall apart!).

I will warn you – these will not last long! We ate the entire batch in one evening. Oops!
Variation ideas
- Try adding nuts to the recipe. Pecan or walnut would taste amazing.
- Try other chips such as white chocolate, peanut butter, dark chocolate and more.
- I think peanut butter morsels and peanut frosting would be yummy.
- We used a yellow cake mix but you can use chocolate or devil’s food.

I like to buy several cake mixes when I spot a good sale at the grocery store. We tend to have lots of last minute baking needs and having this in the pantry means it’s not a problem!
It seems we always need to bring a snack or dessert to this event or that function. Since you don’t need many ingredients, they are so easy to mix up on the spur of the moment.
We can easily make these to take to a get together or event on a moments notice. The kids have even had a bunch of friends over and we made these quickly.

I also like to use parchment paper when I bake. It helps make clean up easy.
If you don’t have a wire rack, they are so handy to help cool the bars completely if you plan to take them out and then cut them.
I would definitely pick up a set if you don’t have any. They will get used a lot if you bake.

They are great for lunch box treats for the kids and much cheaper than store bought prepackages snacks and such.
We all love them and they definitely do not go to waste. It’s hard to eat just one.

Ingredients
- 1 Yellow Cake mix
- 1/3 cup vegetable oil
- 2 eggs
- 1/2 cup butterscotch chips
- 1/2 cup chocolate chips
Instructions

I found a really easy cake mix cookie bar recipe recently. Its a yellow cake mix, 5 tbsp of melted butter, 2 eggs beaten, and 2 cups of chocolate chips, m&m’s or probably any candy. Mix all together, put in 9×13 pan at 350 for 20 minutes. They are easy and yummy!!!
