Ingredients for easy Italian meatball soup:
- Frozen Beef Meatballs, 1 package (24 oz.)
- Crushed Tomatoes (15 oz.)
- 1 can of Tomato Sauce (8 oz.)
- 6 cups Beef Broth
- ½ Onion, Diced
- 2 Stalks Celery, Diced
- 2 Carrots, Peeled and Diced
- 1 tsp of Salt
- 2 tsp Italian Seasoning
- 1 tsp of Pepper
- 1 ½ cup Ditalini Pasta
- Fresh Parsley, Chopped
- ½ cup Shredded Parmesan Cheese
How to make crock pot Italian meatball soup:
Place all the ingredients except for the pasta, parsley and parmesan cheese in a crock pot. It is that easy!
Stir and cover.
Cook on low for 6-8 hours or on high for 3-4 hours.
Stir in the Pasta for the last 30 minutes if cooking on low and 15 minutes if cooking on high.

Serve topped with the chopped parsley and shredded parmesan cheese.

We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.
If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.
I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

Yes, you can use fresh meatballs. I recommend baking them prior to adding them to the crock pot so that they do not fall apart. Since they will already be cooked, I would add them for the last hour of the cook time only. I hope you enjoy it!
This soup has lots of room for improvement. Basically, it tastes like Chef Boardee spaghetti and meatballs out of a can. Next time I make it, I will experiment with adding ingredients.
