Ingredients
- Skinless Chicken Breasts – You can also use skinless chicken thighs
- Seasonings – We used cumin, chili powder, paprika and minced garlic
- Mango Peach Salsa – We used the jar salsa, but you can make Mango Salsa
- Black Beans – Use the can or make Slow Cooker Black Beans
- Corn – We usually use the can. But if I have leftover Mexican Corn on the Cob I add the kernels to this recipe
- Fresh Lime – Fresh lime juice is always best
- Cilantro – Adds flavor. If you do not like it, you can omit it.
How to Make Slow Cooker Mango Salsa Chicken
Step 1 – Gather all Ingredients – Place chicken and everything else in the slow cooker except the mango, cilantro and rice.
Step 2 – Cook Ingredients – Cook on low for 6-8 hours or on medium high heat for 3-4 hours. Let everything cook until the chicken is falling apart.
Step 3 – Shred Chicken – I like to remove the chicken shred it once it is finished cooking. It is so tender you can easily shred it with a fork. Mix back in with the salsa and juice for amazing flavor.
Step 4 – Sprinkle the fresh cilantro and combine with other ingredients.
Step 5 – Serve and Enjoy – Serve the chicken mixture with rice and top with fresh mango and salt and pepper.

Crockpot Mango Salsa Chicken
Ingredients
- 3 chicken breasts boneless skinless
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 2 teaspoons minced garlic
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 jar mango peach salsa (15 oz)
- 1 can black beans (drained and rinsed)
- 1 cup corn
- 1 fresh lime (juiced)
- ½ cup cilantro (chopped)
- 1 fresh mango (chopped)
- 6 cups white rice (cooked)
Instructions
- Place everything but the mango, cilantro and rice in the crock pot.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the chicken, shred, and return to the crock pot.
- Stir in the fresh cilantro.
- Spoon on top of warm white rice and top with fresh mango. Enjoy!
