The sausage gravy will thicken as it cooks. It may seem thin at first, just continue cooking until it thickens. We do not recommend adding more flour.

The main difference between the two is that country gravy is not made with meat. The gravy is started with melted butter instead of grease. I usually make country gravy when I make fried chicken or chicken fried steak.

This is exactly how I was taught to make it, and I am in my late 70’s. Both of my Gramma’s made this, both from different countries,so we had the best of 2 . My maternal Gramma lived on a farm most of her life, in both countries, she had fresh milk and cream always whenever she wanted it. Paternal Gramma was a city family, she used canned pet milk, as fresh wasn’t always available for them. I am talking the early 1900s’. So we were taught to use both, and I can say they both tasted phenomenal, with the canned milk being creamier, you also can add water to thin the gravy if needed.
