This is my go-to casserole whenever a friend needs a meal. I often double the recipe so I can deliver one and keep the other in my freezer. At just $2.42 per serving, it is an affordable way to share a homemade dinner. With 8 kids to feed, I also love that it takes less than 10 minutes of active prep before the oven does the rest.
Why You’ll Love This Recipe!

- Budget Friendly — $14.52 total for a creamy hearty casserole
- Only 6 simple ingredients
- Make ahead friendly — assemble up to 2 days ahead and bake when ready
- Freezer friendly
After 14 years of developing recipes I know that the best budget-friendly casseroles are always the ones that taste far more impressive than their ingredient cost suggests — and this poppyseed chicken proves that every single time. If you love this classic dish, then you will probably love chicken and rice casserole, chicken a la king recipe, chicken divan recipe, and marry me chicken.
Ingredients

- Shredded chicken breasts — rotisserie chicken is the fastest option and gives the most flavor. Boiled or baked chicken breasts work equally well. You need about 4 cups which is approximately 4 standard chicken breasts. Canned chicken works — drain and rinse 3 cans of 12 oz each before using
- Sour cream — creates the rich creamy base alongside the soup. Full fat gives the best result. Greek yogurt works as a lighter substitute with a slightly tangier flavor
- Cream of chicken soup — the savory binding base of the casserole. Use straight from the can — do not add water. Our Homemade Cream of Chicken Soup gives an even richer result. Cream of mushroom works as a flavorful substitute
- Salt — seasons the creamy filling throughout. Always taste before baking and adjust
- Poppy seeds — the signature ingredient that gives this casserole its distinctive nutty flavor and subtle crunch throughout every bite. Do not skip — they are what makes this recipe so unique
- Butter, melted — combined with the crushed crackers to create the rich golden topping. Always use unsalted so you can control the saltiness
- Crushed Ritz crackers — the buttery crunchy topping that makes this casserole unforgettable. Approximately 1½ sleeves gives you the perfect coverage. Crush by hand in a zip-top bag for easy cleanup. Saltine crackers work as a substitute but give a less buttery result
Carrie’s Tip: Add the Ritz cracker topping right before the casserole goes into the oven — never ahead of time. The crackers absorb moisture from the creamy filling and go completely soggy if they sit on top for more than a few minutes before baking. If you are making this ahead assemble everything through the creamy chicken layer cover and refrigerate then add the buttery cracker topping right before it goes in the oven for the crunchiest most golden result.
How to Make Poppyseed Chicken
Step 1 – Preheat the oven to 350 degrees F.

Step 2 – Place the cooked chicken in the bottom of a 9X13 baking dish.

Step 3 – In a mixing bowl, stir together the cream of chicken soup, sour cream, black pepper, salt and poppy seeds.

Step 4 – Pour this mixture on top of the chicken mixture and spread in the baking pan.

Step 5 – In a separate bowl, gently stir together the topping ingredients. Sprinkle this mixture on top of the casserole.
Step 6 – Bake for 20-25 minutes until the top of the casserole is slightly browned and the sauce begins to bubble at the bottom of the pan.
Step 7 – Let the casserole rest for 5 minutes and then it’s ready to serve and enjoy!

Tips for Success
- Add the topping right before baking. Ritz crackers sitting on the creamy filling absorb moisture and go soggy — always add immediately before the casserole goes in the oven
- Cover the filling completely. Spread the creamy chicken mixture all the way to every edge so every bite has the same ratio of creamy filling to crunchy topping
- Use rotisserie chicken. The most convenient and flavorful option — shred directly from the bird and this becomes a true 10-minute prep recipe
- Double the batch. Assemble a second casserole in a disposable foil pan freeze without the topping for up to 2 months and add fresh topping right before baking from thawed
Variations and Addition Ideas
- Add 2 cups of cooked rice to the bottom of the baking dish under the chicken for a heartier one-dish dinner
- Stir in a cup of fresh broccoli florets or frozen vegetables with the creamy mixture for a complete meal
- Add ½ teaspoon each of garlic powder and onion powder to the creamy mixture for extra savory depth
- Stir in a tablespoon of fresh thyme or parsley for an herby variation
- Swap Ritz crackers for crushed saltines or buttery crackers of your choice
- Use cream of mushroom soup instead of cream of chicken for a different but equally delicious flavor base

This recipe was very good. It was extremely easy to make and easy to follow all of the directions. We will definitely be making this more in the future.
Perfect for a busy weeknight meal.
My whole family loved this recipe!
The perfect weeknight meal
Is there a reason l can’t l use raw diced chicken in this recipe and cook ?
I think that you could but you will likely need to cook it longer 35-40 minutes until the chicken is cooked through and I recommend watching the casserole toward the end of the cooking time and if the top is getting too brown, cover it with foil to prevent it from getting too browned. Let me know how it turns out!
This is my adult son’s favorite! I usually send home an unbaked half recipe for his freezer, including cracker topping, with instructions to thaw completely before baking.
Wanda – That is a great idea and such a blessing to your son!
I have a couple questions regarding making 2 so you can freeze one for later use. Do you go ahead and put the cracker topping on the one you freeze? Do you cook it frozen, or thaw it out completely first? I’m looking forward to trying this recipe!
I wouldn’t. I would leave the cracker topping off when you freeze. You can freeze it with the cracker topping but the crackers won’t be as crisp. Normally I freeze it and then I would leave it in the fridge overnight to allow it to thaw some and then cook until heated through. It will take longer if it still frozen. thanks!
Amazing Flavor! This casserole is easy to make and I even doubled the recipe.
