I’m about to share with one yummy and easy dinner idea – Jalapeño Popper Chicken casserole.
If you love those cheesy jalapeño poppers then you are going to love this dinner. It is inspired by those. Now to make my life easier I will sometimes use precooked diced chicken, or rotisserie chicken. You can cook chicken breasts and diced them up for this easy casserole recipe.
Doesn’t this just look so yummy! It has that perfect blend of cheese and spice. It definitely has a splash of heat, but not too much that you can’t handle it. Our kids devoured it and they all came back for seconds.
The great thing about this recipe is you have the chicken already cooked and you can cook the pasta in advance to save you even more time. You could even freeze it or make it the night before so you just have to toss it in the oven. The options are endless! 🙂

How to make Jalapeño Popper Chicken Casserole:
You are going to love this Jalapeño Popper Chicken Casserole. It is delicious and can me ready in no time!
- 2 cups cooked chicken diced
- 8 0z cream cheese
- 1 package of bowtie pasta 16 oz
- 2 cups monterrey jack cheese
- 1 cup cheddar cheese
- 1 cup water
- 1 cup milk
- 1 fresh jalapeno - seeded and diced
- 1/2 cup bread crumbs
Preheat oven to 350 degrees.
Boil pasta to al dente - just follow directions.
In a pan, melt the cream cheese and water and milk.
Add in the cheese and stir to melt.
Then add in the pasta and the diced jalapeños (save a few for the top).
Mix in the chicken and pour into a 9x13 baking dish. Top with Bread crumbs and left over jalapeños.
Bake covered for 20 minutes.
Baked uncoverd for 10 more minutes and serve.
