Ingredients needed for recipe: butter, peanut butter, brown sugar, corn flakes and chocolate chips.
  • Butter – We used unsalted butter
  • Creamy Peanut Butter – We recommend sticking with regular peanut butter for best results. Natural peanut butter or almond butter may result in the same texture.
  • Light Brown Sugar – Learn How to Make Brown Sugar
  • Corn Flakes – Lightly crush cereal in a ziploc bag with a rolling pin or food processor. Feel free to change the crunchy cornflakes. It would be great using frosted flakes instead of plain corn flakes. Chocolate Frosted Flakes taste amazing too! 
  • Chocolate Chips – Dark Chocolate Chips is an easy substitute

Variations Ideas

I love using what I already have in my pantry and sometimes that means trying new things. Here are some of our favorite add-ins:

  • Milk Chocolate Chips – Mini Chocolate chips are our favorite
  • Peanut Butter – Add in crunchy peanut butter or creamy peanut butter. Peanut Butter Corn flake treat sounds like a perfect combination. Or crunch bars would be great with crunchy peanut butter.
  • Nuts – Adding in a teaspoons of sliced almonds or peanuts would add in some extra crunch.
  • M&Ms – You can add in some M&M’s. You can mix in for the holiday – Red & Green for Christmas, Pastels for Easter, or Red for Valentines.
  • Cereal – If you do not have enough corn flakes you can mix in some rice krispies to make this recipe. You can even make these cereal bars gluten free with the base recipe. The corn flakes bars are the best treat.
  • Additions – Other ideas to mix into the cornflake mixture is a tablespoon of honey, marshmallows or shredded coconut. We have even added in a tsp of vanilla extract for even more flavor.

How To Make Cinnamon Cornflake Squares

Step 1 – Line an 8X8 baking dish with parchment paper and set aside.

Step 2 – Heat the brown sugar and corn syrup in a saucepan or a Dutch Oven over medium high heat until it starts to boil slightly.

Step 3 – Remove the pan from heat and then stir in to melt butter and peanut butter until smooth and combined.

Step 4 – Gently pour in the corn flakes in a large bowl.

Step 6 – Melt the chocolate chips in a small bowl, heating it in 30 second intervals, until melted. Spread or drizzle the melted chocolate on top of the peanut butter mixture and top with the flakey salt if using. 

  • Step 7 – Let cornflake cookies sit at room temperature until the chocolate is fully set on a wire rack and then the bars are ready to serve and enjoy!  

Expert Tips

  • Melting Chocolate – Make sure not to overheat the chocolate or it could easily burn. Microwave it in only 30 second intervals to prevent it from burning.  
  • Prepare Baking Pan – We like to line the baking dish with parchment paper to easily remove the cornflake squares. This makes it also easy to clean then pan and to cut into squares with a sharp knife on a cutting board.
  • Allow to Set – We like to make these bars ahead of time so that we give it plenty of time to rest.

We used an 8×8 baking dish to make this recipe. But if you are doubling the recipe, then I would use a 9×13 baking dish.

Can I Freeze Cornflake Cinnamon Squares?

Yes, you can freeze these cornflake cinnamon squares. You can freeze the mixture in the pan or cut into squares and freeze the individual servings. Make sure to wrap in plastic wrap and then foil to prevent freezer burns. They will stay fresh for up to 3 months.

      I don’t recommend freezing these. I find that the marshmallows great crisp and crunchy after this has been frozen and I prefer them to be gooey!
