We love making easy cupcake recipes from scratch and these homemade funfetti cupcakes are one of my favorites. The fun rainbow jimmies sprinkle makes the Funfetti cupcake recipe perfect for any celebrations.

These cupcakes are simple to make with easy pantry ingredients. They are even topped with homemade vanilla buttercream frosting. These cupcakes are moist full of flavor and will make anyone smile.

Ingredients

Ingredients needed - flour, baking powder, baking soda, salt, eggs, sugar, vanilla extract, oil, buttermilk, sprinkles, butter, powdered sugar, heavy cream

For the Cupcakes 

  • All-Purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Eggs, room temperature 
  • Granulated sugar
  • Pure Vanilla Extract
  • Vegetable Oil 
  • Buttermilk (room temperature) 
  • Rainbow Sprinkles 

For the Frosting

  • Unsalted Butter (room temperature) 
  • Powdered Sugar
  • Vanilla Extract
  • Heavy Cream 
  • Rainbow Sprinkles

Variation Ideas

  • Cake Mix – Feel free to use a cake mix to make this recipe. You can even change the flavor and make chocolate cupcakes.
  • Sprinkle Cupcakes – These vanilla cupcakes are delicious and we love adding in the sprinkles. If you prefer you can also add in chocolate chips.
  • Unfrosted Cupcakes – My boys prefer cupcakes without any frosting. Feel free to make some without the frosting.
  • Flour – Feel free to change the flour to meat your dietary needs. You can use wheat flour or gluten-free flour.

How to Make Confetti Cupcakes: 

  • Step 1 – Heat Oven – Preheat the oven to 350 degrees and fill 2 cupcake pans with cupcake liners.

Step 2 – Combine Flour Mixture Whisk together baking soda, flour, baking powder, and salt. Set aside.

Step 3 – Mix Egg and Sugar – In a large bowl, add the eggs, and the sugar. Then continue beating for about 30 seconds. Mix until the mixture is light and fluffy.

Step 4 – Add in Oil and Vanilla – Add oil and vanilla extract, beat until well combined. Gradually add dry ingredients alternating with buttermilk. Beat until well combined, batter will be thin.

Step 5 – Fold in Sprinkles – Use a spatula to gently mix in the rainbow sprinkles.  Be careful not to over mix.  

  • Step 6 – Divide Batter – Divide the batter into cupcake liners.  Fill them approximately 2/3 of the way full. 
  • Step 9 – Bake Funfetti Cake – Bake for 12-14 minutes or until a toothpick inserted in the center comes out clean. 
  • Step 10 – Cool Cake on Cooling Rack – Cool completely on wire racks.  

How to Make Homemade Frosting

Step 1 – Beat Butter – In a large mixing bowl, beat the butter until its creamy, light and fluffy.

Step 2 – Mix in Powdered Sugar – Gradually mix the powdered sugar into the butter mixture ½ cup at a time. Make sure that the powdered sugar is completely mixed in before adding more.  

  • Step 3 – Add in Cream and Vanilla – Turn the mixer speed to low. Then add in the heavy cream and vanilla extract.  Beat for approximately 30 seconds to 1 minute until the frosting is a good consistency. 
  • Step 4 – Pipe Frosting – Pour the frosting in a decorator’s bag fitted with a star tip.  Pipe the frosting onto each of the cupcakes and top with more rainbow sprinkles.  
  • Step 5 – Serve and Enjoy – Then the cupcakes are ready to serve and enjoy. 

Recipe Tips

  • Sprinkles – For the sprinkles, use Jimmies or Quins.  Do not use nonpareils as the color will blend through the batter. 
  • Cupcake Batter – Mix the ingredients together with a mixer. But do not over mix the cupcake batter.
  • Line Cupcake Pan – We recommend lining the cupcake pan with cupcake holders. This helps to easily remove the cupcake from the pan.
  • Filling Cupcake Pan – Once the batter is combine, pour the batter into the pan. Fill about 2/3 cup full in each cupcake liner. We recommend using a large cookie scoop.
  • Piping Bag – We like to use a piping bag to use to decorate the cupcakes. You can also use a ziplock bag to pipe the frosting.
  • Cool Cupcakes – Make sure to cool the cupcakes before adding the frosting.
  • Light and Fluffy – For the best results, we recommend beating the butter and sugar together for about 30 seconds.
  • Room Temperature Ingredients – We recommend that the egg whites are at room temperature before mixing with other ingredients.
  • Frosting – Beat the frosting until stiff peaks form on low speed.

Can you Freeze Cupcakes?

If you like to plan ahead you can easily freeze the cupcakes. We recommend freezing them without the icing because it is easier.

  • Place the cupcakes inside a freezer container and freeze up to 3 months. Thaw in the refrigerator overnight when ready to use and decorate as normal.
  • If you freeze the cupcakes with icing, it is best to flash freeze them. Freeze on a baking sheet for 1 to 2 hours. This will harden the frosting so it does not get messed up in the container.

Then transfer the cupcakes to a freezer container and freeze as normal.

How to Store Cupcakes

Store the leftover cupcakes in an airtight container at room temperature for 3-4 days. You can refrigerate the cupcakes for up to 1 week.
