Ingredients for the best red velvet cupcakes

  • 1 ⅓ cups Cake Flour (You can find an great recipe here to make cake flour. )
  • 2 Tablespoon Cocoa Powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ Cup Butter Softened at room temperature
  • 1 cup Sugar
  • ¼ cup Vegetable Oil
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • Red Gel Food Coloring
  • 2/3 cup Buttermilk

How to make red velvet cupcakes

Preheat the oven to 350 degrees F.  Line 16 muffin tins with cupcake liners.

Combine the flour, baking soda, cocoa and salt together in a mixing bowl.

Using either a stand up or hand held mixer, combine the butter and sugar until thoroughly mix together (approximately 1 minute).

Then add in the oil, egg yolks (save the egg whites) and vanilla extract. Mix until these ingredients are combined and use a spatula to scrape the edge of the bowl as well.

Then slowly add in the dry ingredients and the buttermilk until both are thoroughly combined into the wet ingredients.

Next, add approximately 2 tsp of red gel food coloring until the batter is the color that you desire for your cake.  In a separate mixing bowl, beat the egg whites until they are light and fluffy and form peaks.

Pour the batter evenly into the 16 cupcake liners in the muffin pans.  Bake for 15-18 minutes until a toothpick inserted into the center comes out clean.

BAKING TIPS FOR RED VELVET CUPCAKES:

Save time and use a cookie scoop! I have a set of stainless steel cookie scoops that I love and they make baking so much easier. You can order a set here.

They really are a time saver.  If you love baking, I recommend that you keep these in your kitchen.

I don’t even consider myself a baker and I use them all the time. I use the largest size to scoop the cupcake batter and it makes it so easy.

The smaller scoop I use for cookies and to make meatballs. You will definitely get your money worth out of these little scoops.
