We save a ton of time cooking by having items like this already on hand chopped and ready to go in the freezer.

Another time saving tip is to use a small food chopper or food processor to quickly and easily chop onions and peppers. If you do not have one of these, I highly recommend them. They are such a time saver and you make cooking so fast and easy.

I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

Ingredients

  • 3 boneless skinless chicken breast sliced
  • ½ red onion sliced
  • ½ red bell pepper sliced
  • ½ green bell pepper sliced any color will do actually -the more the merrier
  • 2 cups chicken broth
  • 1 Tablespoon Italian seasoning
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 16 oz Angel Hair pasta
  • 1 cup Parmesan cheese

Instructions

  • Place the chicken in the slow cooker. I used a 6 quart crock pot.
  • Add the onion, peppers, and broth on top.
  • Top with all the delicious seasonings and cook on low for 6-8 hours or until everything is tender and delicious.
  • Once everything is finished cooking, I like to shred the chicken and then stir it back into the crock pot with the veggies.
  • Serve over angel hair pasta and top with Parmesan cheese. Yum!

  2. Jenni – You can definitely use frozen chicken. That’s what I generally use. I would cook on low for 6-8 hours or 4 hours on high in the crock pot. Thank you!
