Today’s recipe is one of my favorites! Mostly because of how easy it is, but also because it is unbelievably delicious! It doesn’t look like much, but I promise you will love it!

Before I share this super easy dip recipe with you, I have to first tell you a quick story about how I first fell in love with this copycat fiesta ranch dip!

My local church puts on a “Taste of the Seasons” each year in December. Basically a bunch of families pile in and share a delicious recipe. We put the samples out on the tables for everyone to try and everyone gets to take home a cookbook.

It is by far one of my favorite times of the year! It is probably my husband’s favorite part of the Christmas season. I mean… what man doesn’t like to eat?!

Well, one year, my friend Deanna, made this Fiesta Ranch Dip recipe with sour cream and I couldn’t stop eating it. I took more than my fair share of samples.

In fact… I might have gotten a few people to go get more samples so she wouldn’t know I was going back to for seconds… I mean fourths! 😉

So Christmas Eve rolls around and I decided to make this recipe for my husband’s family. Everyone was raving about how good it was.

Me, being the smart person I am, took complete credit for the recipe. Haha! Ok, I really didn’t, but I can’t say that I didn’t think about it!

Fiesta Ranch mix packets are hard to find in many areas. Since their recipe is copyright protected it is hard to know what exactly is in it.

For a super simple fiesta ranch mix copycat recipe combine half a packet of taco seasoning and half of packet of ranch seasoning. Then use your new seasoning mixture as you would the store-bought packet.

How long does this dip last?

You can make Fiesta Ranch Dip in advance if needed. It comes together so quickly that most of the time you shouldn’t have to. It can keep in the refrigerator for up to 3 days.

This dip should not be kept at room temperature for more than 2 hours. Keep that in mind while serving it at a party. I like to place my dip bowl inside a larger bowl filled with ice to help it maintain temperature a little longer.

If your dip has been left out for longer than 2 hours, it is safest to throw the rest away.

What ingredients are needed for Fiesta Ranch Dip? 

  • 1 packet of Hidden Valley Original Ranch Salad Dressing and Seasoning Mix
  • 16 ounces of sour cream
  • 1 10 oz can of rotel (or any canned tomatoes with diced green chilis will work); drained
  • 1 can of corn; drained
  • ¾ cup of shredded cheddar cheese

How to make Fiesta Ranch:

You won’t believe just how easy this hidden valley fiesta ranch dip is!

  1. First in a medium-sized bowl combine the sour cream and hidden valley ranch mix.
  1. Once combined, add in the corn, Rotel and shredded cheese.
  1. Mix all ingredients together.
  1. Chill for one hour or overnight in the refrigerator.
  2. Serve it with your favorite tortilla chips, Fritos (that is our favorite dipper!) or vegetables.

Or, you can even serve it with a spoon. Yes, you read that right! I may or may not have been guilty of using a spoon. Don’t judge. It saves calories, right? 😉

Money saving tips:

Canned corn and Rotel (brands like Red Gold) go on sale all the time, usually in a 4-6-week cycle. When you see them for a good price, stock up so that you never have to pay full price!

Also, don’t be afraid of using generic brands.  Most of the time they’re just as good and they cost a lot less too.

Ingredients

  • 1 packet original Ranch Salad Dressing and seasoning mix
  • 16 ounces sour cream
  • (1) 10 oz can of rotel (or any canned tomatoes with diced green chilis will work)
  • 1 can corn (she called for Mexicorn, but I didn’t have it and it still tasted great)
  • 3/4 cup shredded cheese

Instructions

  • Mix all the ingredients in a medium size bowl.
  • Allow it to chill for one hour.
  • Serve with your favorite chips.
