Fiesta Ranch Dip Recipe
My local church puts on a “Taste of the Seasons” each year in December. Basically a bunch of families pile in and share a delicious recipes. We put the samples out on the tables for everyone to try and everyone gets to take home a cookbook. It is by far on of my favorite times of the year. It is probably my husbands favorite part of the Christmas season. I mean… what man doesn’t like to eat.
Well my friend Deanna, made this Fiesta Ranch dip and I couldn’t stop eating it. I took more than my fair share of samples. In fact… I might have gotten a few people to go get more more samples so she wouldn’t know I was going back to for seconds… I mean fourths! 😉
So Christmas Eve rolls around and I make this recipe for my husband’s family and everyone raves about how good it was. Me being the smart person I am… took complete credit for the recipe. Haha! Ok, I really didn’t, but I just have to share with you this simple but fun recipe.
It is perfect for almost any gathering…. especially football season.
Here is all you need:
- 1 packet of original Ranch Salad Dressing and seasoning mix
- 16 ounces of sour cream
- 1 10 oz can of rotel (or any canned tomatoes with diced green chilis will work) – drained
- 1 can of corn, drained
- 3/4 cup of shredded cheese
How to make this Fiesta Ranch Dip recipe:
All you do is mix everything in a medium size bowl and allow it to chill for an hour. Serve it with your favorite tortilla chips, fritos (like we did), or serve it with a spoon. Yes… I “might” have been guilty of using a spoon. It saves calories, right? 😉
Money saving tips:
Canned corn and Rotel (brands like Red Gold) go on sale all the time. Stock up. You can also make homemade ranch mix, but I haven’t done that yet. I’m sure it would save you money by making your own.
