Ingredients

Hibachi Chicken Ingredients - small bowls of minced garlic, sesame oil, soy sauce, butter, onion powder, salt, pepper, and oil with a diced chicken breast in a clear container
  • Chicken Breast – Cut into bite-sized pieces so the skinless chicken breasts cooks quickly and evenly.
  • Soy Sauce – Adds the classic savory hibachi flavor. Low-sodium soy sauce works well if you prefer less salt or check out these Best Soy Sauce Substitutes.
  • Sesame Oil – A small amount adds the signature nutty flavor often found in hibachi dishes.
  • Onion Powder – Provides extra flavor without needing fresh onions.
  • Salt & Black Pepper – Enhances the flavor of the chicken
  • Avocado Oil – Works well for high smoke points cooking. Vegetable oil or canola oil can also be used.
  • Cloves Garlic, minced  – Fresh garlic gives the best flavor, but jarred minced garlic works great for convenience.
  • Butter – Adds richness and helps create that classic hibachi-style finish.

How to Make Hibachi Chicken

In a mixing bowl, there is a whisk with soy sauce, sesame oil, onion powder, pepper and salt.

Step 1 – In a mixing bowl, whisk together the soy sauce, sesame oil, onion powder, pepper and salt.

Step 2 – Add the chicken and let it marinate for approximately 15-20 minutes.

Step 3 – Preheat a regular skillet, griddle, wok or cast iron pan over medium high heat. Add the oil to the pan. Once the oil is heated through, add the garlic and marinated chicken to the pan. Let the chicken cook on both sides on high heat for 2-3 minutes until browned on both sides.

Step 4 – Add the unsalted butter and continue to cook and then toss the chicken in the melted butter until the chicken is cooked through (internal temperature of 165 degrees F). 

Step 5 – Remove the chicken from the pan. Serve with your favorite hibachi sides and enjoy!

Tips for Success

  • Cooking Chicken – When browning the chicken, resist the temptation to frequently toss the chicken while it’s browning. Let the chicken sit for a few minutes to get good and browned before turning and then brown the other side as well.  
  • Use high heat – Hibachi cooking relies on high heat for flavor and texture.
  • Cut the chicken evenly – Similar-sized pieces cook more evenly.
  • Use a large skillet or griddle – Overcrowding the pan can cause the chicken to steam instead of brown.

Variations & Substitutions

  • Use chicken thighs instead of chicken breasts for a juicier option.
  • Make it gluten-free by using coconut aminos instead of soy sauce.
  • Add veggies such as zucchini, mushrooms, carrots, broccoli or onions to cook alongside the chicken.
  • Add a little heat with red pepper flakes or a drizzle of sriracha.

Storage & Freezer Instructions 

  • Refrigerator – Store leftovers in an airtight container for 3–4 days.
  • Reheat – Reheat in a skillet over medium heat or microwave until warmed through.
  • Freezer – Cooked hibachi chicken can be frozen for up to 2 months. Thaw overnight in the refrigerator before reheating.

    I LOVE this recipe! I was doing a similar version that wasn’t quite…there. Once I used your version, it was perfection.
    The second time, I cut up chicken tenderloin and seared them in the pan with a little salt. Then, I did a little reduction with the marinade ingredients (in the same pan). It was great! The chicken had really great browning this way.
