- Boneless Skinless Chicken Breast – Dice up the chicken into small pieces
- Peanut Butter – We used regular peanut butter
- Low Sodium Soy Sauce – If you are out, see Best Soy Sauce Substitute even gluten-free options
- Honey – Substitute with maple syrup or brown sugar
- Lime – Fresh squeeze lime is best
- Chicken Broth – See Chicken broth substitutes
- Red Bell Pepper – You can also use green bell pepper or yellow bell pepper
- Fresh Cilantro – If you do not like it, you can leave out

How to Make Thai Peanut Chicken in the Crockpot
- Step 1 – Add the chicken, peanut butter, soy sauce, 1 tablespoons honey, lime juice and chicken broth to the crock pot. It is that simple.

- Step 2 – Cover and cook on low for 6 hours or on high for 3 hours.
- Step 3 – 30 minutes before serving stir in the red peppers and cilantro. You don’t want the bell peppers to be overcooked so it is important to not add those until right at the end.

- Step 4 – Serve and Enjoy this delicious recipe. I really think your family will love this easy meal. It is not on our permanent menu plan rotation.

Ingredients
- 3 chicken breast boneless Diced
- ½ cup peanut butter
- ⅓ cup soy sauce
- 1 tbsp honey
- 1 lime Juiced
- 1 cup chicken broth
- 1 red pepper cut in strips
- 1 bunch fresh Cilantro divided
- ¼ cup roasted peanuts chopped for garnish
Instructions
- Add the chicken, peanut butter, soy sauce, honey, lime juice and chicken broth to the crock pot.
- Cover and cook on low for 6 hours or on high for 3 hours.
- 30 minutes before serving stir in the red peppers and cilantro.
- I served over white rice topped with the chopped roasted peanuts.

- Adding Vegetables – Add the vegetables towards the end of the cooking time to keep them tender. If adding to early, the veggies could get mushy.
- Cooking Time – Cooking time will vary, you may need to use a meat thermometer to ensure that the chicken is cooked through.
- Sauce Consistency – If your sauce consistency is to thin, then you may need to add in cornstarch slurry to thicken.
Variations Ideas
- Chicken – We used chicken breast in this recipe, but you can easily use boneless skinless chicken thighs if you prefer.
- Seasoning – This recipe can be made with different types of seasonings. Add in ½ teaspoon red pepper flakes, minced garlic, ginger, or for a hint of sweetness add in brown sugar.
- Vegetables – Another delicious addition is add in shredded carrots or cabbage towards the end of cooking time.
- Coconut Milk – Add in full fat coconut milk for a creamy texture.
- Rice Wine Vinegar – We recommend to add in 2 tablespoons of rice vinegar for a delicious addition. Red Curry Paste is another great addition.
