Why This Recipe Works

Takeout is expensive and not always that great or fast. Put this in the crock pot in the morning and dinner will be all ready when you come home.

This is much simpler than going to a drive thru or getting take out. You will enjoy this much better than anything you can buy and save  a ton of money as well!

I love how simple the recipe is and easy to adapt to what you have. You can use chicken thighs instead of chicken breasts. Try green bell peppers instead of red or even add onion if you like.

I often just use what I already have or what is on sale at the grocery store. We are fans of using what we already have.

We love simple recipes like this. I keep recipes like this on the regular menu plan rotation because I know the entire family will enjoy these meals.

  • Vegetables – Another delicious addition is add in shredded carrots or cabbage towards the end of cooking time.

  • Step 2 – Cover and cook on low for 6 hours or on high for 3 hours.
  • Step 3 – 30 minutes before serving stir in the red peppers and cilantro. You don’t want the bell peppers to be overcooked so it is important to not add those until right at the end.

  • Step 4 – Serve and Enjoy this delicious recipe. I really think your family will love this easy meal. It is not on our permanent menu plan rotation.

Recipe Tips

  • Chicken and Veggies – We recommend dicing the chicken and veggies about the same size. This helps to cook them evenly and about the same time.
  • Adding Vegetables – Add the vegetables towards the end of the cooking time to keep them tender. If adding to early, the veggies could get mushy.
  • Cooking Time – Cooking time will vary, you may need to use a meat thermometer to ensure that the chicken is cooked through.
