Are you ready for another delicious and frugal recipe? Today we made Southwest Chicken Lettuce Wraps. This recipe is crazy easy and oh so delicious. Now… I got smart and I used the new The Good Table® products.
They have all kinds of flavors and you can use it on chicken, pork, and fish. Now we decided to use the Southwest Tortilla one, because we like a little “spiciness” with our food. Don’t worry – this isn’t too spicy. It is has a slight kick and delicious flavor.
See all the different varieties? We have tried the Southwest Tortilla and the Parmesan & Herb and our family loves them back. Our next one we will try will be the lemon & herb for fish. It sounds delicious. Now, we purchases them at our local Walmart and they are located on the bread crumb aisle.
Basically it gives you s a sauce that you coat the chicken in. Then you toss the meat in the crust mix and bake. It is that simple.
I placed mine on a cookie sheet lined with foil. That helps when clean up.
So for dinner we served this delicious chicken with my homemade spanish rice and salad. But I made extra so we would have enough for an easy second dinner.
The next night we made this super easy southwest chicken lettuce wraps.
Here is what you need:
- southwest Tortilla chicken made from The Good Table® (purchase at Walmart)
- canned corn (or frozen corn – thawed)
- shredded cheese
- canned black beans
How to make Southwest Lettuce Wraps:
1. Take the left over chicken cold and slice it up.
2. Take romaine lettuce leaves and pull them apart keeping them whole.
3. Place sliced chicken on each leaf.
4. Spoon in corn and black beans. Just about a tablespoons of each.
5. Top with shredded cheese and enjoy!
Our family loved this simple recipe. Even the kids gobbled them up!
