  • Plain Greek yogurt — the key ingredient that makes this marinade different. Always use plain full fat for the best result.
  • Garlic powder — adds savory depth throughout the marinade. Fresh minced garlic also works — use 2 cloves
  • Lemon juice (2 lemons) — always use fresh squeezed for the brightest most authentic flavor. Bottled works in a pinch but fresh is noticeably better

Step 1: Combine the ingredients. In a large bowl, whisk together all the ingredients except for the chicken.  Mix well to combine.

How to Cook Greek Marinated Chicken

GRILL

Step 1 — Preheat grill to medium-high heat (400°F). Oil the grill grates to prevent sticking.

Step 2 — Place chicken directly on the grill grates and cook for 6–7 minutes per side until the internal temperature reaches 165°F.

Step 3 — Remove from the grill and let rest for 5 minutes before slicing.

OVEN

Step 1 — Preheat oven to 400°F.

Step 2 — Place chicken in a baking dish and bake for 25–30 minutes checking at 20 minutes until the internal temperature reaches 165°F.

Step 3 — Let rest for 5 minutes before slicing.

STOVETOP

Step 1 — Heat a skillet over medium heat with a drizzle of olive oil.

Step 2 — Cook the chicken for 8–10 minutes per side until slightly browned and the internal temperature reaches 165°F.

How Long to Marinate

Twenty minutes is the minimum and gives you great flavor — up to 2 hours is ideal for the most tender result. Do not marinate longer than 2 hours. The lemon juice and yogurt acids will over-tenderize the chicken and affect the texture. Overnight marinating is not recommended for this recipe.

Tips for Success

  • Always use plain Greek yogurt. Full fat plain Greek yogurt gives the best tenderizing result and the richest flavor. Never substitute with flavored yogurt or regular yogurt
  • Use fresh lemon juice and zest. The zest especially adds a depth of citrus flavor that bottled juice simply cannot replicate. It takes 30 extra seconds and makes a noticeable difference
  • Never reuse the marinade. Any marinade that has had raw chicken in it must be discarded. Never use it to baste the chicken while cooking as it poses a food safety risk
  • Always use a meat thermometer. Insert into the thickest part of the chicken — it is done when it reads 165°F regardless of which cooking method you use
  • Let the chicken rest. Five minutes of resting before slicing keeps all the juices inside the meat — cutting too soon lets them run out and the chicken dries out

Common Mistakes to Avoid

  • Marinating too long. More than 2 hours with chicken breasts and the lemon juice and yogurt can start to make the texture mushy instead of tender.
  • Skipping the meat thermometer. Chicken can look done on the outside and still be undercooked in the middle — 165°F is the only way to know for sure.
  • Crowding the pan or grill. If the chicken pieces are touching, they’ll steam instead of getting that light char. Give each piece room.
  • Cutting into the chicken right off the heat. Skipping the 5-minute rest lets the juices run out onto the cutting board instead of staying in the meat.

  • Use chicken thighs instead of breasts for a juicier result — thighs are more forgiving and often cheaper per pound

Instructions
