This Bolognese Sauce is rich hearty ground beef slow simmered with crushed tomatoes, red wine, garlic and Italian seasoning into a thick deeply flavored meat sauce. Just $2.52 a serving and so much better than anything from a jar.

Spaghetti night is on our dinner rotation every week. Making Bolognese sauce from scratch turns it into a meal everyone looks forward to because the long simmer creates a rich, flavorful sauce. After 14 years of developing recipes, I always make a double batch and freeze half so the next spaghetti night is even easier.

What is Bolognese Sauce?
Bolognese sauce is a rich Italian meat sauce traditionally made with ground meat, tomatoes, and aromatics like onion, carrot, and celery. Unlike a basic spaghetti sauce, it simmers slowly to develop a thick, hearty texture and deep flavor.
This version keeps things simple by skipping the traditional carrot and celery (soffritto) most classic Bolognese recipes call for — the Worcestershire sauce and long simmer still build plenty of savory depth. If you’d like the more traditional version, add 1 finely diced carrot and 1 finely diced celery stalk along with the onion in Step 1.
Ingredients

- Ground beef — 80/20 ground beef gives the richest most flavorful result — the fat renders into the sauce during the long simmer and adds incredible depth. Lean ground beef gives a lighter result. Italian sausage ground turkey or a combination of both work as substitutes
- Onion, finely diced — the savory aromatic base of the sauce. Dice as finely as possible so it melts completely into the sauce during the long simmer — picky eaters will never know it is there
- Crushed tomatoes — three cans give you the perfect amount of tomato base for a thick hearty sauce. Canned crushed tomatoes are more affordable and convenient than fresh and give a perfectly consistent result every time
- Tomato paste — adds richness and helps thicken the sauce significantly. A full 12 oz can gives you a deeply concentrated tomato flavor that is the backbone of an authentic Bolognese
- Worcestershire sauce — adds a deep savory umami depth that you cannot identify but would immediately notice if it was missing. Do not skip it
- Italian seasoning — the classic herb blend that flavors the sauce throughout. Make your own by combining dried oregano basil and garlic powder if preferred — our Italian Seasoning Recipe takes 2 minutes
- Minced garlic — adds bold savory depth throughout the sauce. Fresh minced or jarred both work equally well — jarred saves time on a busy night
- Salt and pepper — always season lightly at the start and taste again right before serving. The sauce concentrates during the long simmer so what seems perfectly seasoned at the beginning may be too salty by the end
- Bay leaf — adds a subtle herby depth that infuses throughout the long simmer. Always remove before serving — bay leaves are not edible
- Red wine — adds a rich complex depth that is the hallmark of an authentic Bolognese. Use any dry red wine you would drink — never cooking wine. Substitute with extra chicken broth for an alcohol-free version
- Chicken broth — adds flavor and creates the perfect sauce consistency during the long simmer. Beef broth gives a deeper more robust result
Carrie’s Tip: Do not rush the simmer — the full 1.5 to 2 hours on medium-low heat is what transforms a basic meat sauce into a genuine Bolognese. The long slow cook allows the wine to cook off the tomatoes to concentrate and the flavors to develop a deep richness that a 30-minute sauce simply cannot achieve. Set it on the lowest possible simmer stir occasionally and let time do all the work.
How to Make Bolognese Sauce
Step 1 – Brown the ground beef with the diced onion in a large pot or Dutch oven over medium high until no longer pink. Crumble the beef as it cooks and drain off any excess grease.

Step 2 – Stir the remaining ingredients in the pot with a wooden spoon.

Step 3 – Bring the mixture to a low boil and make sure you are stirring occasionally.
Step 4 – Reduce the heat to a low simmer. Cook for 1.5-2 hours to allow the flavors to blend and for the sauce to thicken.
Step 5 – Remove from the heat. Serve over your favorite type of pasta and enjoy!

Tips for Success
- Always simmer low and slow. The full 1.5 to 2 hours on medium-low heat is non-negotiable — rushing the simmer on higher heat gives you a thin watery sauce instead of the thick deeply flavored Bolognese you are looking for
- Use a large heavy-bottomed pot. A Dutch oven or large heavy pot distributes heat evenly and prevents the sauce from scorching on the bottom during the long simmer — a thin pot on medium heat will burn the sauce before it develops properly
- Make it ahead whenever possible. Bolognese sauce genuinely tastes better the next day as the flavors continue to meld overnight in the refrigerator — make it Sunday night and Monday’s spaghetti dinner is already completely done and more flavorful than it was fresh
- Always double the batch and freeze half. Bolognese freezes beautifully for up to 3 months — one cooking session gives you two complete dinners and the frozen batch reheats in 10 minutes on the stovetop for the fastest most impressive weeknight dinner imaginable
- If your sauce tastes a little sour, stir in a small pinch of sugar — this is common with mid-range canned tomatoes and easily balanced out.
Variations Ideas
- Change the Meat – We made this sauce with ground beef, but feel free to change it to what you prefer. We like to make this sauce with Italian Sausage, Ground Pork, Veal, or Ground Turkey.
- Chicken Broth – Feel free to change the broth to chicken stock or you can also beef broth.
- Seasoning – Feel free to use seasoning that you prefer. Italian seasoning blend is perfect, but you can also add in oregano, cloves garlic, and fresh basil.
- Heavy Cream – For a creamy sauce texture, add in heavy whipping cream. You can also add in diced cream cheese.
- Dry White Wine – Substitute the red wine for dry white wine for an easy substitutions.
- Vegetables – This sauce is traditionally made with added vegetables. It is also a great way to sneak in chopped broccoli or bell peppers.

Serving Suggestions
After making the sauce it is now ready to serve with your favorite noodles. Toss with your traditional spaghetti noodles, pappardelle, tagliatelle, or any pasta you prefer. We even like to dip these Olive Garden Toasted Ravioli’s for a delicious combination.
Make sure to add a side of Homemade Artisan Bread, Caesar Salad, and Air Fryer Broccoli for a complete meal idea. Top the Bolognese Sauce with parmesan cheese or mozzarella cheese for delicious flavor.
For a restaurant-style finish, toss the drained pasta directly in the sauce (rather than spooning sauce over plated pasta) with a splash of reserved pasta cooking water, over medium heat for 1-2 minutes. This helps the sauce cling to the noodles instead of pooling at the bottom of the bowl.

Storage & Freezer Instructions

- Reheating: Warm on the stovetop over medium heat or in the microwave, stirring occasionally. Add a splash of broth or water if the sauce has thickened.
