My family loves going to Outback Steakhouse for their steaks and Alice Springs Chicken. We love making Copycat Recipes so I knew I had to recreate my family’s favorite menu item at home.
From the tender chicken, honey mustard marinade, sauteed mushrooms to the crispy bacon and the melted cheese, my entire family said this was spot on but taste better than restaurants.
Now I can make it at home which saved me time and money! This Alice Springs Chicken Recipe is packed with delicious flavor for a meal that you can enjoy for a weeknight dinner or a date night in.

Ingredients

- Boneless, Skinless Chicken Breasts – Substitute with chicken thighs or chicken tenders
- Bacon – Cook bacon or use already cooked bacon
- Mushrooms – This is a classic topping, but you can omit if you do not like them
- Onion – Slice onion
- Colby Jack Cheese – Use freshly shredded cheese. Substitute with cheddar cheese or Monterey Jack Cheese
- Simple Spices – Salt and Pepper
- Olive Oil – Use oil of your choice
- Honey Mustard Sauce – Combine mayo, honey, Dijon Mustard, white vinegar, garlic powder and paprika to make a homemade sauce. Substitute with store bought if you prefer
How to Make Alice Springs Chicken

Step 1 – In a small bowl, whisk together mayonnaise, honey, Dijon mustard, vinegar, garlic powder, and paprika until smooth. Set honey mustard sauce aside.

Step 2 – In a large oven safe skillet over medium heat, cook bacon until crispy. Remove to paper towels, then roughly chop.

Step 3 – In the same skillet with bacon grease, sauté mushrooms and onions until softened and starting to brown, about 5-6 minutes. Remove the mushrooms and onions from the pan and clean out the pan.

Step 4 – Heat the oil in the pan over medium high heat. Add the chicken to the pan in a single layer. Season with salt and pepper.

Step 5 – Cook without moving the chicken for about 5 minutes per side to brown both sides of the chicken. Remove from heat. Pour the honey mustard sauce over each chicken breast.

Step 6 – Top each chicken breast evenly with mushroom-onion mixture and chopped bacon. Bake for 10-15 minutes until chicken reaches 165°F internal temperature.

Step 7 – Sprinkle cheese over the top and return to the oven for 3-4 minutes until melted, golden-brown and bubbly.

Step 8 – Then the chicken is ready to serve and enjoy! Garnish with fresh parsley right before serving.

Ingredients
- 4 boneless skinless chicken breasts
- 8 slices bacon chopped
- 8 ounces mushrooms sliced
- 1 medium onion sliced
- 2 cups Colby Jack cheese shredded
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
For the Honey Mustard Sauce:
- ½ cup mayonnaise
- ¼ cup honey
- ¼ cup Dijon mustard
- 1 tablespoon white vinegar
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika

Instructions
- Preheat oven to 375°F.
- In a medium bowl, whisk together ½ cup mayonnaise, ¼ cup honey, ¼ cup Dijon mustard, 1 tablespoon white vinegar, ¼ teaspoon garlic powder, and ¼ teaspoon paprika until smooth. Set the honey mustard sauce aside.
- In a large oven-safe skillet over medium heat, cook 8 slices bacon (chopped) until crispy. Remove the bacon to paper towels and set aside.
- In the same skillet with the bacon grease, sauté 8 ounces sliced mushrooms and 1 medium sliced onion for 5–6 minutes until softened and starting to brown.
- Remove the mushrooms and onions from the pan and clean out the pan. Â
- Heat 1 tablespoon olive oil in the skillet over medium-high heat.
- Add 4 boneless skinless chicken breasts in a single layer and season with 1 teaspoon salt and ½ teaspoon black pepper.
- Cook without moving the chicken for about 5 minutes per side to brown both sides of the chicken.  Remove from heat.
- Spread 2 tablespoons of honey mustard sauce over each chicken breast.
- Top each chicken breast evenly with mushroom-onion mixture and chopped bacon.
- Bake for 10-15 minutes until chicken reaches 165°F internal temperature.
- Sprinkle 2 cups shredded Colby Jack cheese evenly over the chicken and return the skillet to the oven for 3–4 minutes until the cheese is melted and bubbly.
- Then the chicken is ready to serve and enjoy!

We enjoyed this recipe! It wast straightforward to make and tasty. One note: I didn’t pound the chicken to an even thickness because I didn’t see that tip in time. I will try that if I make it again.
