How to Make Cottage Cheese Egg Bites
The blender is the secret to this recipe — it makes the cottage cheese completely smooth so the bites have that creamy custard texture instead of a lumpy egg muffin.
Step 1 – Preheat the oven to 325 degrees F and generously spray a muffin tin with non-stick cooking spray.

Step 2 – Place the eggs, cottage cheese, salt and black pepper in a blender. Blend until smooth.

Step 3 – Divide the diced toppings (spinach, red bell pepper and green onions) evenly into the bottom of the muffin cups.

Step 4 – Top each one evenly with the shredded cheese.

Step 5 – Pour the egg mixture into each muffin tin evenly. They will be approximately â…ž full.

Step 6 – Bake for 18-22 minutes until the tops are set. The eggs will puff up as they cook but don’t worry, they will go back down as they set.

Step 7 – Remove from the oven, let the egg bites rest for 5 minutes. Carefully remove them from the muffin tin and then they are ready to serve and enjoy!

Has anyone tried freezing these and reheating them? If so, were they still good? I would like to make a batch for my dad to have prepared meals ready as needed.
Liane – I haven’t tried it yet but I think they will freeze great. After baking and letting them cool completely, place them on a baking sheet. Freeze for 1 hour and then transfer to a freezer safe bag or container and freeze for up to 2 months. When reheating, defrost over night in the refrigerator or with the defrost setting on a microwave. Reheat for a 30-60 seconds in the microwave and they would be delicious!
