Ingredients

Ingredients needed to make this recipe which includes olive oil, precooked shrimp, salt and pepper, garlic, paprika, oregano, lime, corn tortilla, red cabbage, jalapeno, cilantro and cojita cheese.
  • Olive Oil – Helps sauté the shrimp quickly and keeps the seasoning from sticking to the skillet.
  • Frozen Precooked Large Shrimp – A huge time-saver for busy nights. Make sure the shrimp is peeled, deveined, and thawed before cooking.
  • Salt and Pepper – Simple seasonings that bring out the flavor of the shrimp.
  • Minced Garlic – Adds savory flavor without needing a long ingredient list. Feel free to substitute with garlic powder.
  • Paprika – Gives the shrimp a smoky, warm flavor and beautiful color.
  • Oregano – Adds a little earthy flavor that pairs well with the shrimp and lime.
  • Lime – Fresh lime juice brightens the shrimp and makes the tacos taste fresh.
  • Corn Tortillas – A budget-friendly option that works well with shrimp tacos. Warm them before serving so they do not tear.
  • Red Cabbage – Adds crunch, color, and freshness. Bagged coleslaw mix works too if you need a shortcut.
  • Jalapeno – Adds a little heat. Remove the seeds for a milder flavor.
  • Cilantro – Adds fresh flavor. You can leave it out if your family does not like cilantro.
  • Cojita Cheese – Salty and crumbly, perfect for topping tacos. Feta or shredded cheese can work in a pinch.

How to Make Baja Shrimp Tacos

Step 1 – Sauté the shrimp in olive oil and all of the spices in a pan over medium-high heat. This will only take a few minutes.

Step 2 – Squeeze the lime over top the shrimp once it is finished cooking. This is my favorite part!

Step 3 – Spoon the shrimp into the tortillas and top with the shredded cabbage, jalapenos, cilantro and cojita cheese.

Tips for Success

  • Don’t overcook shrimp (gets rubbery fast)
  • Pat shrimp dry before cooking for better texture
  • Warm tortillas for better flavor
  • Add lime at the end for brightness

Variations & Substitutions

  • Raw Shrimp – You can use raw shrimp in this recipe. You will need to adjust your cooking time. Cook shrimp until it is pink.
  • Shrimp Taco Sauce – Make a shrimp baja sauce with Greek Yogurt or sour cream for a sauce to add flavor to your tacos. Chipotle Mayo is also a good addition.
  • Coleslaw Mix – We shredded cabbage in this recipe, but you can easily use Coleslaw Mix to add to the top of the shrimp tacos.
  • Taco Seasoning – Use taco seasoning instead of the individual seasoning to add to the shrimp. You can make your own taco seasoning or use a packet.
  • Chili Powder – If you prefer a little bit of spice to this mixture, add in chili powder or red pepper flakes.
  • Lime Juice – Our favorite part is squeezing lime juice over the shrimp tacos for added flavor.
  • Tortillas – We used corn tortillas but you can easily use flour tortillas.

How to Store and Reheat

If you have leftover Baja Shrimp mixture, place in an airtight container to enjoy another day. This shrimp mixture will stay fresh for about 3 to 5 days in the fridge.

When you are ready to reheat, place the leftover shrimp on a baking sheet and reheat. Place in the preheated oven at 350 degrees and reheat for about 15 minutes.

You can microwave the shrimp but we find that it doesn’t have the same texture.

Made this for a quick meal after a long day working my real estate career. Thankful I had most of the ingredients on hand. Was wonderful in spite of not having all the ingredients. Will pick up the missing ingredients and make it again for my family when we are together! Thank you! Thank you!

Wow! This recipe was great. Very fresh tasting, cool but spicy. It sure was a crowd pleaser and easy to make. I made some with shrimp, chicken and chorizo, since not everybody likes shrimp. I made lime cilantro rice for a side. Definitely would make again. Thanks.
