Ingredients

- Carrots – We recommend using fresh carrots
- Green Onions – Chop into small pieces
- Chopped Parsley – Adds flavor and color
- Extra-Virgin Olive Oil – Use oil of your choice
- Fresh Lemon Juice – For the fresh lemon juice, 2 Tablespoons of juice is approximately 1/2-1 lemon depending on the size of the lemon.
- Honey – You can use maple syrup instead of honey in this recipe.
- Dijon Mustard – Adds a tangy flavor and balances the dressing flavors
- Simple Spices – All you need is Ground Cumin, Salt and Pepper

How to Make Carrot Salad

Step 1 – Peel the carrots. Then shave the carrots by continuing to peel the carrots with a peeler until the carrots are shaved.

Step 2 – Place the shaved carrots in a medium size bowl. Stir in the chopped green onions and fresh parsley.

Step 3 – In a separate small bowl, whisk together all the dressing ingredients until completely combined and blended.

Step 4 – Pour the dressing over the carrot mixture and stir until all the ingredients are coated with the dressing.
Step 5 – Refrigerate the salad for 20-30 minutes for the carrots to soak up the dressing.
Step 6 – Toss before serving and then it’s ready to serve and enjoy!

Instructions
- Peel the carrots. Then shave the carrots by continuing to peel the carrots with a peeler until the carrots are shaved.

- In a separate small mixing bowl, whisk together all the dressing ingredients until completely combined and blended.
- Pour the dressing over the carrot mixture and stir until all the ingredients are coated with the dressing.
- Refrigerate the salad for 20-30 minutes for the carrots to soak up the dressing.

Recipe Notes
- Peeling Carrots – When peeling the carrots, make sure to stop peeling once you get to the core of the carrot as the inside of the carrot can be tough. We like using a julienne peeler to easily peel. But you can also use a food processor.
- Add Crunch – Try chopped pecans, walnuts, or sunflower seeds.
- Chill Salad – Allow time for the salad to soak up the dressing before serving. This will give the Carrot Salad the best flavors.
