Ingredients

  • Corn – We used Creamed Corn and drained Whole Kernel Corn. You can also use Fresh Corn Kernels but you will need to cook corn on the cob first.
  • Jiffy Cornbread Mix – The base of this jiffy corn casserole

  • Shredded Cheddar Cheese – You can also substitute with Monterey Jack Cheese or Sharp Cheddar Cheese
  • Butter – We used unsalted butter
  • Cream Cheese – Softened the cream cheese to room temperature to easily combine the simple ingredients

How to Make Cheesy Corn Casserole

Step 1 – Preheat the oven to 350 degrees F and spray a 9X13 baking dish with non-stick cooking spray.

Step 2 – In a large bowl, beat together the butter and softened cream cheese until combined.

  • Using Jiffy Corn Muffin Mix – Don’t prepare the Jiffy corn mix based on the package instruction just dump the bag into the mixing bowl with the other ingredients.
  • Baking – Make sure that the middle of the casserole is set and still slightly jiggly when it’s done. The casserole will continue to cook as it sets.
  • Use Freshly grated cheese – It melts smoother, creamier and there are no added ingredients.
