This Cheesy Corn Casserole is rich, creamy, and loaded with sweet corn and melted cheese! This is an easy side dish for holidays, potlucks, or family dinners!

This Cheesy Corn Casserole has been a family favorite at every holiday table! It’s creamy, comforting, and so easy to throw together. I remember my grandma making it every Thanksgiving, and now it’s one of my go-to recipes when I need a Side Dish that everyone loves.
It’s the kind of comfort food that disappears fast and always has people asking for the easy recipe. From the golden brown topping to the creamy center, this side dish is so delicious and made with simple ingredients. Ingredients

- Corn – We used Creamed Corn and drained Whole Kernel Corn. You can also use Fresh Corn Kernels but you will need to cook corn on the cob first.
- Jiffy Cornbread Mix – The base of this jiffy corn casserole
- Large Eggs – Binds the ingredients together
- Shredded Cheddar Cheese – You can also substitute with Monterey Jack Cheese or Sharp Cheddar Cheese
- Butter – We used unsalted butter
- Cream Cheese – Softened the cream cheese to room temperature to easily combine the simple ingredients

How to Make Cheesy Corn Casserole
Step 1 – Preheat the oven to 350 degrees F and spray a 9X13 baking dish with non-stick cooking spray.

Step 2 – In a large bowl, beat together the butter and softened cream cheese until combined.

Step 3 – Hand stir in the creamed corn, drained corn, Jiffy cornbread mix, eggs and shredded cheese.

Step 4 – Pour the mixture into the baking dish.

Step 5 – Bake for 30-35 minutes until golden brown and the casserole is set. Let sit for 5-10 minutes and then the casserole is ready to serve and enjoy!

- 1 can Whole Kernel Corn approximately 15 ounces, drained
- 1 box Jiffy Cornbread Mix approximately 8.5 ounces
- 2 Large Eggs
- 1 cup Shredded Cheddar Cheese
- ½ cup Butter melted
- 8 ounces Cream Cheese softened
Instructions

- In a medium size mixing bowl, beat together the butter and softened cream cheese until combined.
- Hand stir in the creamed corn, drained corn, Jiffy cornbread mix, eggs and shredded cheese.
- Pour the mixture into the baking dish.
- Bake for 30-35 minutes until golden brown and the casserole is set.
- Let sit for 5-10 minutes and then the casserole is ready to serve and enjoy!

- Using Jiffy Corn Muffin Mix – Don’t prepare the Jiffy corn mix based on the package instruction just dump the bag into the mixing bowl with the other ingredients.
- Baking – Make sure that the middle of the casserole is set and still slightly jiggly when it’s done. The casserole will continue to cook as it sets.
- Use Freshly grated cheese – It melts smoother, creamier and there are no added ingredients.
- Spicy – Add diced jalapeños or pepper jack cheese for a kick of flavor.
- Bacon Corn Casserole – Stir in crumbled cooked bacon before baking for a hint of savory flavor.
- Mexican Style – Mix in a can of diced green chilies and top with cilantro and sour cream to this easy corn casserole recipe.
- Loaded Corn Bake – Add green onions, extra cheese, and crushed crackers on top. This is the variation I always bring to potlucks and always a crowd pleaser.
