These Cranberry Brie Bites have become one of my must-make holiday Appetizers. They look fancy but take just minutes to put together and every single bite is a delicious mix of flaky, creamy, and sweet.
I love serving them at Thanksgiving, Christmas, or any winter gathering because they disappear fast and always impress guests. Itโs one of those recipes that proves simple ingredients can create something unforgettable!

Ingredients

- Frozen Puff Pastry – You can also use crescent dough
- All Purpose Flour – for dusting the dough
- Wheel of Brie Cheese – Feel free to use another soft cheese such as goat cheese if you do not like brie.
- Whole Berry Cranberry Sauce – Use the Whole Cranberry sauce (not jellied) for this recipe.
- Chopped Pecans – Optional topping. You can also use chopped walnuts
- Fresh Rosemary Sprigs – Optional topping

How to Make Cranberry Brie Bites
Step 1 – Place the wheel of brie cheese in the freezer for 15 minutes so that it keeps its form while baking.
Step 2 – Preheat the oven to 375 degrees F and spray a 24-cup mini muffin pan generously with a non-stick cooking spray.
Step 3 – Sprinkle the flour onto a cutting surface and roll out the puff pastry.ย

Step 4 – Cut the puff pastry dough sheet lengthwise into 4 even strips and then cut it crosswise into 6 even strips making 24 equal size square pieces.

Step 5 – Press any piece down into the mini muffin tin.

Step 6 – Dice the wheel of cheese into 24 small pieces (approximately ยพ inch in size) and even place a piece of brie inside of the center of each of the mini muffin cup.ย ย

Step 7 – Top each square with a heaping teaspoon cranberry sauce. Top each one with chopped pecans (if using).
Step 8 – Bake for 18-20 minutes in a preheated oven until the dough is golden brown.
Step 9 – Let them rest in the pan for about 5 minutes. Carefully remove to a serving plate and top each piece with a sprig of fresh Rosemary (if using).ย Serve warm or room temperature and enjoy!ย ย

- 2 Tablespoons All Purpose Flour for dusting the dough
- 8 Ounce Wheel of Brie Cheese
- 1 cup Whole Berry Cranberry Sauce
- ยผ cup Chopped Pecans (optional)
- Fresh Rosemary Sprigs (optional)

- Prepare Muffin Pan – Spray the muffin tin generally so that the bites are easy to remove. Make sure to remove them while they are still warm. I find that a fork works well to carefully remove them from the pan.ย ย
- Brie Bites Overflow – Sometimes the brie and cranberry sauce bubbles out of the pastry while baking so just carefully scoop it back in after the cooking time while itโs cooling if needed.ย
- Keep Puff Pastry Cold – Makes cutting and shaping easier.
- Rind of Brie – You can leave the rind on the brie or remove it. Some people do not like the texture of the rind so they remove it. But it is safe to eat.

You will need to use a mini muffin pan for this recipe. The regular muffin pan is to large and would require large size of the crescent rolls to be cut. We prefer the bite size to easily serve.

Store any leftovers in an airtight container for up to 4 days in the refrigerator. It is best to reheat in the oven or the air fryer to re-crisp. If you reheat in the microwave it could make them soggy.
