These East Lemon Brownies are a family favorite. We love anything lemon but combine with a brownie really takes these lemon brownies to the next level. These brownies turn out so light and refreshing.
When spring weather hits, all I can think about is lemon desserts. There is just something about the citrus desserts that just make you happy. Lemon desserts always tend to be light and refreshing.
This recipe is easy to make with simple ingredients. This is my go-to dessert anytime I need to go to a BBQ or a potluck. These irresistible lemon brownies are a crowd pleaser.
Why are they called Lemon Brownies?
Lemon Brownies have the same texture like a regular brownie. The lemon flavored brownies are moist and dense but don’t have the cocoa powder or chocolate chips like standard brownies.
These Lemon Brownies are made from scratch and baked. Then topped with a glazed that is perfectly sweet with lemon.
Ingredients:
For the Brownies:
- Salted butter – softened at room temperature
- Sugar
- Lemon Zest
- Large Eggs
- Fresh Lemon Juice
- Flour
- Baking Powder
- Salt
For the Glaze:
- Powdered Sugar
- Fresh Lemon Juice
- Lemon Zest
How to Make Lemon Brownies:
- Prepare Oven and Baking Pan – Preheat the oven to 350 degrees F. Spray an 8X8 baking pan with non stick cooking spray.
- Mix together Ingredients – Beat together the butter, sugar and lemon zest for the brownies together with a hand held mixer until well combined in a mixing bowl. Add in the eggs and lemon juice and mix until combined.
- Add in Dry Ingredients – Then stir in the flour, baking powder and salt by hand and mix until just combined with the other ingredients.
- Bake Brownies – Pour batter into prepared 8X8 baking pan and bake for 20 to 25 minutes or until a toothpick inserted into the center of the brownies comes out clean.
- Cool – Let the brownies cool at room temperature.
- Prepare Glaze – Whisk together the glaze ingredients. Once the brownies are completely cooled, pour the glaze over the top of the brownies.
- Serve and Enjoy – Then slice, serve and enjoy.
How to Make Lemon Glaze:
The Lemon Glaze is my favorite part. It really brings the tart and sweet flavor together on these lemon bars.
Ingredients needed:
- Powdered Sugar
- Fresh Lemon Juice
- Lemon Zest
Whisk together powdered sugar, lemon juice and lemon zest together. Depending on how thin or thick you want it, you may need to add more lemon juice.
Once ingredients have been mixed together, spread evenly over cooled brownies.
Can you double the Recipe?
Yes, you can double the recipe. Your family will want you to. Simply double the ingredients and add to a 9×13 baking pan.
Can you Make Lemon Brownies ahead of time?
Yes, you can make lemon brownies ahead of time. We recommend preparing the brownies and storing them in an airtight container after the brownies have cooled.
Once you are ready to serve them, top brownies with the lemon glaze. These make the perfect brownies to make for a family get-together or for the Easter holiday.
Can these Lemon Brownies be made Gluten Free?
Yes, these Lemon Brownies can be made gluten free. Just use a gluten free baking powder. They will still just as delicious.
Be sure to check the other ingredients that you are adding to make sure they are gluten free as well.
Lemon Brownie Tips:
- Preparing Pan – If you prefer, you can line your baking pan with parchment paper. This make it easy to remove the brownies and easy cleanup.
- Lemon Lover – If you love lemon as much we do, add in extra lemon juice and lemon zest.
- Lemon Zest – Wash and dry your fresh lemon before zesting. If you don’t have a lemon zester, you can use a small hole cheese grader. Make sure to only zest until you get to the white part of the lemon.
- Juicing Lemon – To get the most out of your lemon, cut lemon into wedges and microwave for about 30 seconds. This allows the lemon to release a lot more juices.
- Bottled Lemon Juice – We recommend using fresh lemons as using bottled lemon juice will change the flavors. Use 2 tablespoons of bottle lemon juice instead of the juice from a squeezed lemon.
How to Store Lemon Brownies:
Leftover lemon brownies need to be kept in an airtight container. You can leave them at room temperature for about 3 to 4 days. If you put them in the refrigerator they will last about a week.
We actually think the brownies taste better the next day, as the lemon glaze really marinates into the brownie.
Can Lemon Brownies be frozen?
Lemon Brownies can be frozen. Let brownies cool first before preparing them to freeze. Lemon brownies are best frozen before they are glazed.
Wrap the brownies in plastic wrap and then in foil to freeze. When you are ready to thaw and serve, just set out at room temperature.
