My kids love this recipe because it has pepperonis. I love it because it is cheap and easy!
Serve with salad and you have a delicious dinner! Everyone will love this.
I love to top with some green onions. The kids don’t like that, but the adults do!
It’s such an easy meal for busy week nights. I can throw this recipe together in just a few minutes.
Everyone always loves it and it’s nice to have a meal that is simple and delicious.
The chicken combined with the pepperoni and tomato sauce make for an amazing meal. It is packed with so much flavor.
Plus, the cheese just adds to it and makes it so delicious!

Chicken Pepperoni Ingredients:
- 3 boneless skinless chicken breasts (thawed)
- 1/4 to half package of pepperonis (either way is great)
- 1 can of diced tomatoes
- 1/2 onion sliced or chopped (my kids prefer it chopped because they can’t see them. I use a food processor to get the onion very fine.)
- 1 can of water (just fill up the bigger can of water)
- 1 can (small one) of tomato sauce (this is completely optional -if you want more sauce, then toss it in, but you don’t really need it. I used it in the picture)
- salt and pepper
- 1 Tablespoon of Italian Seasoning
- 1 teaspoon of garlic salt or garlic powder
- Pasta (You can use any kind on this -I like to use rotini or penne. Spaghetti could be used. Just break it up into smaller pieces before you cook them)
- About a cup of cheese (Italian blend is great -Mozzarella cheese is fabulous too!)
I love to also add green bell pepper but my kids do not care for this. Sometimes, I also add marinara sauce to have a little more sauce with the chicken.
Tip:
I use a small food chopper or processor to quickly and easily chop onions and green peppers. If you do not have one of these, I highly recommend them. They are such a time saver.
I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take diced onion or bell peppers out of the freezer for recipes.

How to make Chicken and Pepperoni Pasta Bake:
- Thinly slice or chuck the chicken.
- Pour about a tablespoon of olive oil in a skillet. (You can also use cooking spray.)
- Cook the chicken and brown the meat heavily over medium high heat. Season with salt and pepper.
**The key is to get the chicken browned before you stir it. It adds extra flavor to the sauce without adding fat. 😉
4. Add onions and pepperonis to the chicken cutlets. (I like to cut them in half before adding them in) and stir until soft.
5. Pour in tomatoes and water. Then add garlic salt and the Italian Seasoning.
6. Bring to a boil and cover. Reduce skillet over medium heat and let simmer about 10 minutes.
7. Meanwhile cook pasta according to directions.
8. Combine pasta with the chicken and sauce. Stir in the cheese.
Enjoy! Season with salt and pepper if you desire.
