I have another fun pumpkin recipe for you to try. Today we are jazzing up the regular old rice krispies treats with the delicious flavor of pumpkin.

These pumpkin rice krispie treats are delicious. You can cut them up small and slide them into a school lunch for a special treat or serve them at your next party. Variations for pumpkin rice krispie treats:

  • Make these treats into pumpkin shapes! Simply shape each rice krispie treat into small balls for the pumpkin. Top it off with a tootsie roll stem and you have yourself a fun party treat or lunch snack!
  • Make them in the microwave! Simply place the butter, pumpkin and marshmallows in a microwave safe bowl. Heat in the microwave for 2 minutes. Stir and cook for an additional minute. Stir until smooth. Allow mixture to cool and then add the cereal and mix until combined. Place in prepared pan or shape.
  • Color your pumpkin rice krispie treats orange! After the marshmallows are melted, tint mixture with a couple drops of red and yellow food coloring. Mix until you reach desired orange color.

  • 3 Tablespoons unsalted butter
  • ¼ cup pumpkin puree – You can also easily make homemade canned pumpkin too.
  • 1 (10 oz.) bag mini marshmallows
  • ¼ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon salt
  • 6 cups crispy rice cereal
  • 2 oz. white chocolate

How to make pumpkin rice krispie treats:

1. Choose your desired size baking pan (I used a 9×9 pan, but for thinner treats use 11×7 or 13×9) and spray generously with nonstick cooking spray.

2. In a large saucepan, melt butter over medium heat. Stir in pumpkin puree (See how to make pumpkin puree) and cook until warmed through.

3. Add marshmallows by folding them in, stirring frequently until completely melted. Remove from heat and stir vanilla, cinnamon, nutmeg, cloves, and salt to the melted marshmallow mixture. You can use 1 teaspoon of pumpkin pie spice if you do not have the individual spices.

4. Let marshmallow mixture cool at room temperature for 20 minutes (cooling helps avoid soggy treats). Add the rice krispies cereal and stir until combined.
