4 ingredient potato soup

There are lots of recipes for potato soup but I always come back to this one. This classic recipe is simple but delicious. With no fuss and no complicated instructions, this soup is effortless.

Since you only need 4 ingredients, it is super fast and easy. The results are wonderful and everyone will think you simmered this for hours. No one will believe it actually took less than 30 minutes.

Ingredients for 4 ingredient potato soup recipe.

Ingredients: 

  • Onion, diced 
  • Butter, divided 
  • Russet Potatoes, peeled and cut into 1 inch pieces. Try to cut the potatoes into the same size so they will cook evenly.
  • Heavy Cream or Whole Milk 

How to make 4 ingredient potato soup:

  • Sauté the onions. In a large pot or stock pot, melt 1 Tbsp of the Butter or olive oil over medium high heat.  Then add in the diced onions and sauté until the onions are tender and translucent.  Then move the onions to a separate bowl or plate. 
  • Boil the potatoes. Then add the diced potatoes to the large pot and cover them with water.  Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until the potatoes are tender.  The potatoes should fall apart when stabbed with a fork.

  • Drain off most of the water. Leave approximately a half an inch of water in the bottom of the pot. 
  • Add the milk to the potatoes. Add the onions, the remaining butter and cream or milk to the large pot.  Combine everything together.
  • Gently mash the potatoes.  You can mash the potatoes with the back of a fork or potato masher if you like chunkier soup or you can use an immersion blender if you like thinner potato soup. 
  • Cook for 5 minutes. Continue to cook the soup on low for 5 more minutes.  
  • Season the soup with salt and pepper to taste. Then the soup is ready to serve and enjoy!

Variation ideas

  • Hashbrowns. Substitute frozen hashbrowns instead of russet potatoes. This will save on prep time.
  • Potatoes. You can use Yukon gold potatoes instead of russet. Just keep in mind that Russet results in the creamiest soup base.
  • Milk. We love using whole milk or heavy cream to make the creamiest soup.  However, you can make this with 2% milk or skim milk to reduce the fat content.  It will work but will not be as creamy.

This easy potato soup can be stored in the fridge up to 4 days. Just make sure it is in an airtight container.

I like to store it in individual portion size containers. This makes it easy for a quick lunch the next day.

Can you freeze potato soup?

Yes, this soup is freezer friendly. Allow the soup to cool and place inside a freezer container or bag.

It can be frozen up to 5 to 6 months.

How to reheat?

Place in a pan and warm the soup using low to medium heat on the stove. Reheat the soup until it is hot and starts to bubble. You do not want it to boil.

Feel free to use the microwave as another method to reheat this soup. I recommend heating in intervals and stirring to prevent from overheating.

How do you thicken potato soup?

If you prefer a thicker soup, use an immersion blender to mash the potatoes. Pureed potatoes will thicken the soup and provide a creamy base.

Another option is to use cornstarch. Start with a tablespoon of cornstarch in a small bowl of cold milk. Combine and pour into the soup. Allow to simmer until the soup has thickened. See How to Thicken Potato Soup for more easy ideas.
