What is Pasta Fagioli Soup?

Pasta Fagioli soup is very similar to minestrone soup but has more pasta and beans. It is such a hearty, delicious and full of flavor soup with a delicious tomato broth, pasta, veggies and beans.

Ingredients

Pasta Fagioli Ingredients - beef, onion, celery, garlic, tomato sauce, diced tomatoes, italian seasonings, thyme, salt, carrots, pepper, red kidney beans, parsley, beans, ditalini pasta, chicken broth, parmesan cheese
  • Ground Beef
  • Onion, Diced
  • Celery Stalks, Diced
  • Minced Garlic
  • Tomato Sauce (8 oz.)
  • Diced Tomatoes (15 oz.)
  • Italian Seasonings
  • Dried Thyme
  • Salt
  • Carrots, Diced
  • Pepper
  • Dark Red Kidney Beans (15 oz.), drained and rinsed
  • Fresh Parsley, chopped
  • Great Northern Beans (15 oz.), drained and rinsed
  • Dry Ditalini Pasta
  • Chicken Broth
  • Shredded Parmesan Cheese

Variations Ideas

  • Change Meat – You can easily change the meat to what you prefer. Add in Italian sausage or substitute for the ground beef.
  • Vegetables – Feel free to change the veggies to what you prefer.
  • Seasoning – You can change the seasoning by adding in red pepper flakes, oregano, or basil to taste. We usually start with ¼ teaspoon and then add more if needed.
  • Broth – Change the broth to beef broth for a delicious variation.

Step 2 – Next, place the beef, onions, carrots, celery, garlic, tomato sauce, diced tomatoes, beans, Italian Seasoning, thyme, salt, pepper and chicken broth in the crock pot.

Step 3 – Cover and cook on low for 6-8 hours. Stir in the uncooked pasta for the last 30 minutes of the cook time on low.

  • Chopping Veggies – We recommend chopping the vegetables about the same size so they cook evenly.
  • Pasta – You can stir the pasta into the cook soup or cook the pasta on the stovetop on medium high heat. Cook the pasta until it is al dente or according to the package.

    I tend to be picky about my pasta fagioli, but this recipe was pretty easy and tasted fantastic. It’s a lot of ingredients so maybe a little more cumbersome on a shopping day than preferred. Otherwise, awesome!
