Steak and potatoes is one of our family’s favorite dinners, so we turned it into a stew that cooks itself. Stew meat costs much less than steaks, but after a long, slow simmer it turns just as tender. You get the steak-and-potatoes dinner everyone asks for without the steakhouse price tag.

Ingredients

Ingredients for recipe: red onion, potatoes, cornstarch, minced garlic, water, beef broth, steak seasoning and stew meat.
  • Stew Meat – Beef chuck works best because it becomes tender as it cooks.
  • Red Onion – Adds flavor, Yellow onion is a good substitute.
  • Potatoes – These soften slightly and help thicken the stew. Yukon Gold potatoes also work.
  • Minced Garlic – Jarred or fresh garlic both work.
  • A1 Steak Sauce – Adds rich, savory flavor. Use your favorite brand.
  • Beef Broth – Low sodium broth works well since the other ingredients add seasoning.
  • Steak Seasoning – Use a Montreal style blend or homemade steak seasoning.
  • Cornstarch and Water – Mix together to thicken the broth at the end.

How to Make Crock Pot Steak and Potato Soup

A clear glass bowl filled with peeled and chopped potatoes sits on a black and white checkered towel, surrounded by bowls of chopped red onions and chunks of raw meat.

Step 1 – dice the the red onion and the potatoes into small bite size pieces. You don’t want the potatoes to big or you won’t be able to eat them in one bite.

Step 2 – Once they are cut up, place them in the crock pot.

Tips for Success

  • Trim Beef – Trim excess fat and cut large pieces into smaller chunks.
  • Skip peeling if you like – Red or Yukon Gold potatoes can be scrubbed and cubed with the skin on.
  • Brown for more flavor. Sear the beef for a few minutes first if you have extra time.

Variation Ideas

  • Add more veggies. Add sliced carrots or celery with the potatoes. Stir in frozen peas or green beans during the last 30 minutes so they stay bright.
  • Add mushrooms. Add 8 ounces of sliced mushrooms with the onion for an even heartier, more savory stew.
  • Make it “loaded.” Top each bowl with shredded cheese, a spoonful of sour cream and sliced green onions.

Serving Ideas

This stew is a full meal on its own, but bread for dipping in the broth makes it even better. Our favorites are these Easy Homemade Dinner Rolls or our 15 minutes Stuffed Cheesy Bread.

Feeding a crowd? Ladle the stew over egg noodles, rice, or mashed potatoes to stretch it further. Add a simple salad or a bag of steamed frozen green beans and dinner is done.

How to Store, Freeze, and Reheat

  • Fridge: Let the stew cool, then store it in an airtight container for up to 3-4 days.
  • Freezer: Freeze cooled stew in freezer-safe containers or bags for up to 3 months. Potatoes can turn a little soft or grainy after freezing. The stew still tastes great, but if you’re planning to freeze a bath, Yukon Golds hold up a bit better than russet potatoes.
  • Thawing: Place it in the fridge the night before you want to eat it.
  • Reheating: Warm it on the stovetop over medium-low heat, stirring occasionally, until hot all the way through. Add a splash of broth or water if it has thickened too much. You can also microwave individual bowls in 1-minute bursts, stirring in between.

Frequently Asked Questions

Do you need to brown the beef?

No. You can add the beef directly to the crock pot for quick prep. For extra flavor, brown it in a little oil for 4 to 5 minutes if you prefer.

What’s the Best Beef for Steak and Potato Stew?

Stew meat is our favorite because it is already cut and ready to use. It is usually made from beef chuck, which becomes tender during slow cooking. You can also cut chuck roast into cubes, and it is often cheaper per pound. Skip lean steaks like sirloin or ribeye because they can dry out in the slow cooker.

Can I add carrots?

Yes! Add 2 to 3 sliced carrots along with the potatoes. Celery and frozen work too. Stir the peas in during the last 30 minutes so they stay bright.

Will it taste like steak sauce?

Not really. After hours in the slow cooker, the steak sauce blends into the beef broth and just tastes rich and savory.

There aren’t crushed tomatoes in the ingredient list but they are in the instructions! Just went to the store and didn’t buy any.

    1. Carrie Barnard says:

You’re right, Beth, and I’m sorry for the confusion! You don’t need crushed tomatoes for this recipe. Use the A1 steak sauce and steak seasoning listed in the ingredients, along with the beef broth and garlic. Thank you for catching that error!

  2. Terry Pickett says:

Can you add carrots to this?

    1. Carrie Barnard says:

I made this today and was worried at first that it would taste like A1 steak sauce soup, but it totally did not. It was so good and filling. A perfect autumn meal. I will definitely make this again. I put a little pepper in it, but that’s the only thing I did differently.

I followed this recipe exactly and my potatoes were not done. I set my crock pot to low for 7.5 hours. I give 4 stars because of the wonderful flavor, but I am sad about the potatoes. They were chopped into small perfect sizes
