Soup is one of my favorite one pot meals. Everything you need for a great dinner is in this easy Crockpot Beef Barley Soup. It’s a great way to stretch stew meat and really maximize your grocery budget.
Plus, the soup is really very hearty. Even big eaters will feel satisfied with this soup. It’s so tasty.
If you can toss a few ingredients into the crockpot, you can make this easy soup. There isn’t anything complicated and you won’t find a ton of complicated steps. Just toss and go!
WHAT DOES BARLEY TASTE LIKE?
It has a grain with a chewy texture and has a slightly nutty flavor. I think it blends perfectly with the other ingredients. You will love it!
Make sure you have a crock pot to make slow cooker beef barley soup.
There are some really good ones on sale right now. If you work all day, you may want to invest in a programmable crockpot.
They are awesome because you can set them to start later, or to stop and switch to warm once the dinners are ready. Amazon has some on sale right now too.
I also really like this crockpot. Now, it’s not programmable but it’s so handy!
It has the feature where you can lock the lid down.
That feature is so nice for when you take meals to potlucks or need to transport the meal somewhere.
Another time saving tip is to use Crockpot liners. They make clean up a breeze.
Instead of scrubbing and washing the pot, you can just toss the liner. It is practically no clean up.
You can also use the instant pot or make this on the stove top if you prefer.
Ingredients for slow cooker beef barley soup recipe:
- 1.5 lbs of stew meat
- 1 tsp salt
- 1 tsp pepper
- 3 Celery Stalks, chopped
- 1 onion, chopped
- 1 tablespoon minced garlic
- 2 cups frozen hashbrowns
- 2 Carrot Sticks, chopped
- 4 cups beef broth
- 2 cups of water
- ½ cup Barley, rinsed
HOW TO MAKE CROCKPOT BEEF BARLEY SOUP?
Add all of the ingredients except for the barley to the crock pot. It is that easy!
Cover crock pot with lid, and cook on low for 8-10 hours.
Add the barley to the crock pot for the last 30 minutes of the cook time. Serve and Enjoy!
WHAT IS THE BEST MEAT FOR SOUP?
We used stew meat but you can easily use other types of beef. Any type of roast will be delicious. Chuck roast is delicious and you can cut into pieces or shred it.
We are big fans of using what we have or can grab on sale at the grocery store. By cooking like this, it really helps me to save money on groceries.

COOKING TIPS FOR BEEF BARLEY SOUP:
The key to this soup is letting it slow cook. This gives the meat time to get tender and the flavors to really blend.
Also, make sure to not put the barley in until the last 30 minutes of cooking.
To save time, we also like to keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.
If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.
I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.
