When the weather gets cooler, stew is one of my favorite things to make. I wanted to try something different and make this Crock Pot Mexican Beef Stew. The crockpot recipe calls for diced tomatoes with green chilies and lots of delicious spices. It really gives the entire dish the best flavor. You are going to love it! This is the perfect one pot meal for busy weeknights but tasty enough for company. Everyone always loves this tasty stew.

How to Make Mexican Beef Stew in the Slow Cooker

  • Step 1 – Place the beef chuck roast in the bottom of a 6 quart crock pot.
  • Step 2 – Add in onion, carrots, potatoes, garlic, diced tomatoes, bay leaf and beef broth.
  • Step 3 – Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Step 4 – Mix the cornstarch into the cold water and stir this mixture into the crock pot for the last hour of the cooking time if cooking on low and for the last 30 minutes if cooking on high.
  • Step 5 – Top with the cilantro and enjoy!

  • Slow Cooker Recommendation – There are some really good ones on sale right now. If you work all day, you may want to invest in a programmable crock pot. They are awesome because you can set them to start later, or to stop and switch to warm once the dinners are ready. Amazon has some on sale right now too. I also really like this crockpot.  Now, it’s not programmable but it’s so handy!
  • Crockpot Liners – Now if you want to save yourself even more time then I really recommend these Crockpot liners. They make clean up a breeze. Instead of scrubbing and washing the pot, you can just toss the liner. It is practically no clean up.
  • Prepare Veggies – We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions. We recommend chopping the vegetables about the size pieces so they cook evenly.
