Crock Pot Mexican Beef Stew
When the weather gets cooler, stew is one of my favorite things to make. I wanted to try something different and make this Crock Pot Mexican Beef Stew. The recipe calls for diced tomatoes with green chilies and lots of delicious spices. It really gives the entire dish the best flavor. You are going to love it!
This is the perfect one pot meal for busy weeknights but tasty enough for company. Everyone always loves this tasty stew.
The Mexican beef stew ingredients are really simple and easy!
You can toss this together in minutes and let the slow cooker do all of the work.
MEXICAN STEW INGREDIENTS
- 2 pounds Beef Chuck Roast, cut into 1 inch pieces
- 1 Tbsp Minced Garlic
- 2 (14.5 oz) can of Diced Tomatoes with Green Chiles
- 1 Bay Leaf
- 2 Tbsp Taco Seasoning
- 3 Large Red Potatoes, quartered
- 3 Large Carrots, Peeled and cut into Large pieces
- ½ Onion, Diced
- 2 cups Beef Broth
- 2 Tbsp Cornstarch
- ¼ cup Cold Water
- Fresh Cilantro, chopped
How to make Mexican beef stew in the slow cooker:
Place the beef chuck roast in the bottom of a 6 quart crock pot.
Add in onion, carrots, potatoes, garlic, diced tomatoes, bay leaf and beef broth.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Mix the cornstarch into the cold water and stir this mixture into the crock pot for the last hour of the cooking time if cooking on low and for the last 30 minutes if cooking on high.
Top with the cilantro and enjoy!

I also really like this crockpot. Now, it’s not programmable but it’s so handy!
It has the feature where you can lock the lid down.
That feature is so nice for when you take meals to potlucks or need to transport the meal somewhere.
Now if you want to save yourself even more time then I really recommend these Crockpot liners. They make clean up a breeze.
Instead of scrubbing and washing the pot, you can just toss the liner. It is practically no clean up.
Time saving tip:
We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.
If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.
I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.
