Easy Crock pot Vegetable soup with frozen vegetables.

This recipe serves 12, which is perfect for my family. If you don’t need that much you can eat half and freeze half (it freezes great)! Plus this slow cooker vegetable beef soup tastes amazing left over. You could also just half the recipe if you wanted.
This soup is a hearty but healthy meal where you can dump all the ingredients and go about your day. Come home to a house filled with the delicious smell of vegetable soup.
If you don’t have a crock pot yet, here are some nice ones on sale. Most of my recipes are created in a 6 quart crock pot, but I love my 4 quart crock pot for small dishes. Now, if you work away from home, then I suggest you get a programmable crock pot so you can have it cook for the perfect amount of time.
Ingredients:
- 2 pounds ground beef or ground turkey
- ½ medium onion, diced
- 2 cups fresh or frozen Lima beans or 1 (15-ounce) can Lima beans, drained
- 2 cups fresh or frozen mixed vegetables or 2 (15-ounce) cans mixed vegetables, drained
- 2 cups fresh or frozen corn off the cob or 1 (15-ounce) can corn, drained
- 2 cups carrots, sliced or 1 (15-ounce) can carrots, drained
- 4 pounds of peeled and diced whole tomatoes or 4 (15-ounce) cans diced tomatoes
- 1 (15-ounce) can tomatoes and okra (optional)
- 2 cups water
Directions to make Crock pot Vegetable beef soup:
1. If using ground beef or turkey, cook meat and onions until golden brown.
2. Add to slow cooker along with all other ingredients.
3. Cook on low for 4 hours
4. Serve hot and enjoy!
You could also cook this slow cooker vegetable beef soup recipe on the stovetop.
Just simmer for about 45 minutes. My family loves this soup and I love how easy it is!

This slow cooker vegetable beef soup freezes great!
You can freeze it after you cook it for easy lunch ideas. I like to freeze mine in silicone cupcake pans and then just pop them out for each lunch services.
You can also place all the ingredients in a freezer bag. Then when you are ready to make your soup you just place all the contents in the crock pot and cook all day. You can’t get any easier than that. 🙂

Karen, yes, you can use kidney beans instead if you don’t like lima beans.

I also wondered what seasonings to use as it shows them being put in but not listed on ingreds and it does need seasonings. I looked up on another recipe and it said salt, pepper and a bay leaf. It is flat without seasonings..

This soup is super easy to put together and makes an excellent lunch throughout the week. I opted to use fat-free chicken stock in place of the vegetable stock just for personal taste and I used petite gold potatoes and kept the skin on. I chopped all my veggies the day before (including the potatoes. Just put them in an air-tight container and cover with water and store in the fridge). Then in the morning I dumped everything into the slow cooker and cooked on high for 4 – 4 1/2 hours. By lunch time it was ready! I stored in single serving sized containers in the fridge to reheat for a healthy & delicious lunch!
