Crockpot vegetable soup recipe

If you can toss food in a crock pot then you can make this easy meal. It is that simple.  Make sure you check out all my crock pot recipes. 

This soup is a hearty but healthy meal where you can dump all the ingredients and go about your day. Come home to a house filled with the delicious smell of vegetable soup.

It doesn’t get any easier and your family can enjoy a healthy and delicious meal with little work.

Make sure you have a good crockpot.

If you are in the market for something new, I really love my Ninja cooker.

It is so handy to just have the one pan to clean since you can brown meat in this one. It has become of my favorite kitchen appliances.

Another favorite is this programmable crock pot  for when I am am not at home all day. I love coming home to a nice meal ready and waiting!

I also like to use crock pot liners to make clean up a breeze. These are worth every penny and save a ton of time.

Can you freeze this?

Yes! Leftovers would freeze amazing and it is so easy. Learn how to freeze soup here.

This recipe serves 12, which is perfect for my family. If you don’t need that much you can eat half and freeze half (it freezes great)!

You can freeze it after you cook it for easy lunch ideas. I like to freeze mine in silicone cupcake pans and then just pop them out for each lunch services.

You can also place all the ingredients in a freezer bag. Then when you are ready to make your soup you just place all the contents in the crock pot and cook all day. You can’t get any easier than that. 🙂

Plus this slow cooker vegetable beef soup tastes amazing left over. You could also just half the recipe if you wanted.

Ingredients to make Crock Pot Vegetable Beef Soup

Crockpot vegetable soup ingredients:

  • Ground Beef
  • Onion
  • Potatoes
  • Frozen Mixed Vegetables with Green Beans
  • Diced Tomatoes
  • Beef Broth
  • Salt and Pepper

How to make slow cooker vegetable soup:

1. If using ground beef or turkey, cook meat and onions until golden brown.

2. Add to slow cooker along with all other ingredients.

3. Cover and Cook on low for 4 hours. You can also add Italian seasoning if you prefer.

4. Serve hot and enjoy!

Salt and pepper to taste.

I told you it was so easy!

Try vegetable soup with beef on the stove top. 

For another idea, try making this on the stove. Just simmer for about 45 minutes.

What to serve with hamburger vegetable soup:

This soup is delicious with a simple side salad. We also love to serve it with some type of bread to dip into all of that delicious broth.

The kids like grilled cheese  with it.

If you have a few extra minutes, this Easy Homemade Dinner Rolls Recipe is great with the soup. You can also pick up some breadsticks or French bread at the bakery if you don’t have time to bake any.

We also like  homemade Hawaiian rolls or some homemade cornbread . I know the recipe is super simple but I think you will be surprised how packed with flavor it really is!

Tip for crockpot vegetable soup:

We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.

If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.

I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

Recipe Notes

This soup can also be made on the stovetop!  Add all the ingredients to a large stock pot and simmer for 30-40 minutes until the soup is cooked through.

    I made the soup a little thicker with corn starch and it was way better when the soup stuck to the veggies.. ? delicious though!

    Took closer to 5 hours on high to be cooked, and needed extra salt and seasoning, but overall a good recipe. Leftovers for days!

  3. Made this with Ground Turkey meat as this was what I had on hand. I only made half recipe since its only me. I added more spices to give more flavor and added minced garlic, and dash or 2 of Worcestershire sauce. Made it the crockpot and having Garlic toast with a bowl full tonight.   4. Could you please explain how Crockpot Vegetable Soup is different than Hamburger Soup?

    Vegetable stew is made with stew meat or chuck roast cut into small cube-shaped pieces. Don’t get me wrong they are both good.

  5. Cooked on high for the recommended max 3 hours and meat was not cooked through when timer went off…was I suppose to cook meat first?

  6. Yes this will still do good all day. If you have a crock pot that automatically goes to warm, even better.

  7. So I want to use my crock pot I need an all day cook. People who work cannot have 4-6 hours. Need more like 9 hours. Can I cook it that long?

    I made this soup last night in my crockpot. I added shredded cabbage to it. This was the best soup recipe. It was even better warned up for supper this evening.

  10. I have a whole pantry full of canned veggies and was wondering if I could use them.

  11. I generally followed the recipe but made a few alterations. I started by browning some onions, and also added an extra can of diced tomatoes instead of the water. I also added turnip instead of green beans. And for a richer, thicker soup, I used condensed tomato instead of a tomato cocktail. The flavors were hearty, and between the cajun seasonings and a thick red-chili-cumin curry paste I added built a little heat. Awesome!

    I have made this soup numerous times and it is so good to come home to after a long day at work on a cold day!

  13. I love this soup! So easy and so delicious! My grandson asks for this every time he visits and his 2 year old brother gobbles it up! I always feel good when serving this because it has so many good things in it. I sometimes add kidney or white beans or black eyed peas (frozen) to the pot.

    I like to make this when grocery money is low, when I need to make a pantry challenge, or when comfort food is calling my name!
    I just throw the ingredients in and let “him” do all of the work. No stress!

  15. I make something so similar to this we just call it hamburger soup. One ingredient we use each time is canned tomatoes/corn/okra..it absolutely pops with flavor, the okra really brings it out. With each bowl served up I put a pad of butter in. Perfection!! We serve it with hot fresh baked yeast rolls.

    I Love vegetable soup. The only thing I don’t like is the Lima beans and either does the family so I would just leave the beans out. Definitely will have to try to make this real soon as we have like 2 ft of snow here in the Catskills New York and more coming this weekend. Looks good!

    This soup is super easy to put together and makes an excellent lunch throughout the week. I opted to use fat-free chicken stock in place of the vegetable stock just for personal taste and I used petite gold potatoes and kept the skin on. I chopped all my veggies the day before (including the potatoes. Just put them in an air-tight container and cover with water and store in the fridge). Then in the morning I dumped everything into the slow cooker and cooked on high for 4 – 4 1/2 hours. By lunch time it was ready! I stored in single serving sized containers in the fridge to reheat for a healthy & delicious lunch!

  32. I also wondered what seasonings to use as it shows them being put in but not listed on ingreds and it does need seasonings. I looked up on another recipe and it said salt, pepper and a bay leaf. It is flat without seasonings..
