Fresh green beans work beautifully — blanch in boiling salted water for 3–4 minutes then transfer to ice water before using
  • Cream of mushroom soup — two standard cans give you the perfect amount of rich creamy sauce base. Do not add water — use straight from the can for the thickest most flavorful result.   • French fried onions — the most important ingredient in the entire casserole and what every family member reaches for first. Half goes into the casserole mixture for flavor throughout and half goes on top for that signature crispy golden finish. Always add the topping portion right before baking — never add ahead of time or they lose their crunch

How to Make Green Bean Casserole

Step 1 – Preheat the oven to 350 degrees F.

Step 2 – In a large mixing bowl, combine the cream of mushroom soup, ⅓ cup milk, salt and black pepper.

Step 3 – Stir in the cooked green beans and half of the french fried onions.

  • Never add the onion topping ahead of time. French fried onions absorb moisture rapidly in the refrigerator — always add right before baking for a truly crispy golden top
  • Bake uncovered the entire time. Covering the casserole traps steam and makes the onion topping soggy instead of crispy — always bake uncovered from start to finish
  • Stir before adding the final topping. Stirring at the 40-minute mark redistributes the sauce and ensures every green bean is evenly coated before the crispy topping goes on
  • Let it rest before serving. Five minutes of resting allows the sauce to set slightly so the casserole scoops cleanly rather than running all over the plate
  • Taste the sauce before baking. The cream of mushroom soup is already salted — always taste the mixture before pouring into the baking dish and adjust salt and pepper to your preference

How to Prepare Ahead of Time

This is the most practical holiday tip in this entire post — here is exactly how to do it:

Up to 48 hours ahead — combine the green beans and mushroom sauce mixture in the baking dish cover tightly with plastic wrap and refrigerate. Do not add any French fried onions at this stage.

30 minutes before baking — remove the dish from the refrigerator and let it sit at room temperature. Add the first half of the French fried onions on top.

Baking from cold — add 10–15 extra minutes to the initial baking time since the casserole will be cold from the refrigerator. Watch for the sauce to be actively bubbling around the edges before adding the final onion topping.

Best result — making this the night before gives you a casserole that has had time for all the flavors to meld together overnight and is actually more flavorful than one assembled and baked the same day.

Potluck – Bringing This to a Gathering Prepare the casserole as directed, but stop before the final 10 minutes of baking (skip the last onion topping for now). Cover with foil, wrap the dish in a towel to help retain heat, and transport in an insulated bag or cooler. Once you arrive, top with the remaining onions and finish baking until hot and bubbly.
