Substitutions and Variations

  • White sugar — swap granulated sugar for the same amount of light brown sugar for a slightly deeper more caramel-forward sweetness that pairs beautifully with the pineapple
  • Ritz crackers — any buttery cracker brand works in place of Ritz. Club crackers Town House or store-brand buttery rounds all give an equally crunchy golden topping. In a pinch, crushed corn flakes tossed in the melted butter make a good substitute for the cracker topping.
  • Sharp cheddar — if your family prefers a less pronounced cheese flavor swap sharp cheddar for mild cheddar. The savory balance will be subtler but still delicious

Can you Use Fresh Pineapple?

Fresh pineapple can work if well-drained — use about 4-5 cups of diced fresh pineapple in place of the canned. Pat it dry with paper towels first, since fresh pineapple releases more liquid than canned and can make the casserole watery if not well-drained.

    I am trying to talk myself into trying this. I just cannot get past the idea of pineapple and cheddar cheese together. I think I have had pineapple chunks with chicken……I have had orange chicken…….I wish I knew a restaurant that served this so I could try it. I don’t have any adventurous family nearby that will eat it if I do not like it. I will keep looking and thinking.

    You must use freshly grated cheese not pre grated. It doesn’t melt or mix properly because it is more desiccated.
