Easy beef enchiladas in a fun tator tot casserole!
Ingredients:
2 pounds of ground beef, browned
1 can of Rotel (diced tomatoes with green chilis), 10 oz
1 Tablespoons of taco seasoning
1 teaspoon of garlic salt
1 can of Red Enchilada sauce, 10 oz
1 bag of tator tots (32 oz)
8 oz of shredded Monterey jack cheese
8 oz of shredded Cheddar Cheese
How to make Beef Enchilada Tator Tot Casserole recipe:
Brown the ground beef.
Stir in the taco seasoning, garlic salt, and the can of Rotel.
Mix in a can of Red Enchilada sauce.
Place at the bottom of the greased 9×13 baking pan.
Spread out the cheddar cheese over the ground beef.
Place one layer of tator tots over the casserole.
Baked at 375 degrees for 25 minutes uncovered.
Sprinkle with the Monterey Jack cheese and put back in the oven until melted.
Serve immediately with your favorite enchilada toppings.
