Today I’m sharing with you one of my favorite soups! Instant Pot Stuffed Peppers Soup Recipe it is the perfect soup to serve during the Fall and Winter months. It is packed with flavors and is easy to make!

Seriously, it has all the delicious flavors of stuffed bell peppers but in a soup form! It is the perfect comfort food. If you have picky eaters and are afraid they won’t like this still give it a try.
This stuffed bell peppers soup recipe is so good even our pickiest eaters love it! The red and green peppers are diced small and they cook up so soft no one will complain.
I love that this soup is made with healthy ingredients – the tender bell peppers and the lean ground beef makes this soup perfect for any specific diet restrictions.

This recipe is one of my all-time favorite soups! I love how comforting it is and packed with so much flavors. If you have ever made stuffed peppers, then you know how time consuming they can be.
That is why I love making a soup version! I just love how easy it is to throw everything in my instant pot and dinner is done! While your soup is being made prepare your uncooked rice. This soup is perfect served with white or brown rice.
If you are doing low-carb, you can even top with cauliflower rice and it is just as good! Sometimes I omit the rice and the soup is just as delicious! Whether you are topping the Stuffed Pepper soup with white, brown, or cauliflower rice it is sure to be a hit with your family!

How long can you store leftovers?
This soup is even better the next day! You can enjoy the leftovers for up to 5 days. I like to store mine in a microwave safe dish so it is easy to reheat!
You can also heat up on the stove top, if you are feeding your family for a quick dinner. We love leftover nights in my family!
This soup also freezes great! I love to freeze in individual servings so I can reheat for a quick lunch! My husband loves to take this soup to work with him, I know that he is eating a complete meal combined with protein, veggies and carbs! Instead of going through a fast food drive-thru!
Can you cook rice in the Instant Pot?
Yes! Let say you are planning a head for the week and know that the instant pot stuffed pepper soup is on the menu. I like to go ahead and get my rice ready for this meal. The Instant Pot White Rice Recipe is so easy to make! You can also make Instant Pot Brown Rice!
White rice freezes great too! I like to make several batches of rice and freeze it for future meals. I usually do it small and family size batches – rather I am needing a side for my lunch or serving it with a family meal. It is a easy side to serve on those busy nights.
Ingredients:
- Lean Ground Beef
- Onion
- Red Bell Pepper
- Green Bell Pepper
- Diced Tomatoes
- Tomato Sauce
- Beef Broth
- Oregano
- Garlic Salt or Garlic Powder
- Worcestershire Sauce
- Salt and Pepper
- Cooked Rice
How to make Instant Pot Stuffed Pepper Soup Recipe:
- Turn your Instant pot to the saute setting.
- Add in the ground beef and break it apart and allow it to brown. You might add a little olive oil before adding your ground beef to prevent it from sticking to the instant pot insert.
- Once brown, cancel the saute setting.
- Place everything else (except the rice) into the instant pot. Stir to combine.
- While your soup is being made, cook the rice.
- Add the lid. Make sure the top is set to sealing.
- Then set timer on 5 minutes on high pressure.
- Once finished do a quick release. The peppers will be soft and delicious.
- Stir before serving.
- Spoon into a bowl and top with a spoonful of cooked rice.
- Enjoy!

Ingredients
- 1 pound ground beef
- 1/2 onion (chopped)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 1 can diced tomatoes (14 oz.)
- 1 can tomato sauce (14 oz.)
- 3 cups beef broth
- 1 tsp oregano
- 1 tsp garlic salt
- 1 Tbsp Worcestershire sauce
- 1/2 tsp pepper
- 2 cups white rice (cooked)
Instructions

- Place everything else (except the rice) into the instant pot. Stir to combine.

- Spoon into a bowl and top with a spoonful of cooked rice.

This soup is delicious! I wish it listed hope much was in a serving, though.

Absolutely loved this soup! It can be made with an Italian flavor served with plain rice, or mexican flavored with Spanish rice! I’ve made it both ways on the nights we want soup instead of whole, stuffed peppers, and it’s always a hit!
