Why You’ll Love This Recipe!

Carrie, the owner, with long dark hair, wearing earrings and a purple top, smiles at the camera in front of a textured, beige background.
  • About $0.59 cents each. Eggs, a little sausage and cheese make these one of the cheapest grab-and-go breakfast you can make.
  • Easy to scale up. As the recipe is written, it makes 6, but you can easily make more for one assembly-line session.
  • No individual wrapping. Flash-freezing them on a baking sheet keeps them from sticking together, so you don’t need foil or plastic wrap for each one.
  • Easy to customize. I make simple egg-and-cheese burritos but you can easily add in peppers, onions, and hash browns.

Having a bag of these in the freezer has saved us more mornings than I can count. You’ll be so glad you made them. For even more easy breakfast recipe, you should try our Taco Bell Breakfast Crunchwrap, Tasty Breakfast Sandwiches, Starbucks Egg White Bites Recipe, and Scrambled Egg Sandwich.

How to Make Freezer Breakfast Burritos

Cooking ground sausage on a skillet with a wooden spoon.

Step 1 – Cook the Sausage – Brown the breakfast sausage in a large skillet over medium heat and just put it aside.

Cooking scrambled eggs in a skillet with a whisk.

Step 2 – Make the Eggs – Next, scramble the eggs. Season with salt and pepper while you are preparing the eggs. Set aside in a bowl.

Step 3 – Prepare the vegetables – If you are adding peppers and onions, cook them in the same skillet until soft, then set aside with the sausage.

Tortillas placed on a wooden platter topped with cooked sausage, eggs, cheese and salsa.

Step 4 – Prepare Burritos – Let the eggs and sausage cool for about 10 minutes, until just warm, before assembling. Make your assembly line and layer your ingredients on each tortilla. Fold the tortillas around the egg mixture and veggies.

Burritos placed on a baking sheet.

Step 5 – Prepare to Freeze – Once you have all the burritos completed, place the burritos on a baking sheet lined with parchment paper. Freeze for at least 1 hour and then move them to a freezer bag to store.

Cooked sausage, eggs, cheese and salsa wrapped in tortillas.

Variation Ideas

Cook any add-ins before they go into the burritos. Potatoes, hash browns, and tater tots should be fully cooked and lightly browned. Watery vegetables like zucchini, squash, mushrooms, and spinach should be cooked and drained well so they don’t make the tortillas soggy.

  • Salsa (we used Taco Sauce)
  • Onions
  • Green Bell Peppers
  • Frozen Hash Browns
  • Mushrooms
  • Potatoes
  • Spinach
  • Squash
  • Zucchini
  • Tater Tots

We have used leftover ground beef and ground turkey and even shredded chicken or pork to make the breakfast burritos. There really is no wrong way to prepare these easy freezer friendly breakfast burritos.

Expert Tips

  • Start with Soft Tortillas – Fresh, soft tortillas are much easier to roll without cracking.
  • Warm Stiff Tortillas – If your tortillas are stiff or cold, wrap a few in damp paper towels and microwave them for about 20 seconds.
  • Don’t Overstuff – Too much filling makes the tortillas tear and keeps the ends from closing.
  • Tortilla Size – We use 8-inch (soft taco size) tortillas. For bigger burritos, use 10-inch burrito-size tortillas and add a little more filling to each one.

What to Serve with Breakfast Burritos?

Breakfast Burritos are really a complete meal all rolled up in a flour tortilla. But I do like to have a few sides to go with it. Here are some of my favorite sides:

  • Make a Fruit tray – I love serving a fruit tray to balance out the meal. Strawberries, blueberries and grapes are usually my family favorites.
  • Guacamole and Salsa – Make some homemade salsa and guacamole for dipping the breakfast burrito in. Sour cream is also a great side for dipping.
  • Hash browns on the side – You can add hash browns to the burrito or serve them as a side.

What Other Proteins Work in Breakfast Burritos?

We love using sausage for our breakfast burritos. It fries well when we are preparing the burritos. But you can also use these other options:

  • Cooked Ham
  • Cooked Bacon
  • Chicken
  • Ground Beef or Ground Turkey
Cooked sausage, eggs, cheese and salsa wrapped in tortillas.

How long can a Breakfast Burrito stay in the Freezer?

When we make breakfast burritos they are the perfect breakfast idea to freeze. We usually make enough for 2 weeks. But the burrito will stay good for about 3 months in the freezer.

When you place the burritos in the freezer, it is a good idea to label the freezer bag. This makes sure what is in the freezer bag and you eat the ones that need to be eaten.

Frequently Asked Questions:

How to Store Leftovers

If you have leftovers for these breakfast burritos, you can easily store in the fridge for up to 4 days. This is a great recipe to meal prep with for the week. Wrap in plastic wrap to easily reheat.

How to Reheat

Simply take the frozen burrito out of the freezer. Wrap the burrito in a damp paper towel. Then reheat freezer burritos in the microwave for about 2 minutes on a microwave-safe plate. You can also bake in the oven or toaster oven at 350 degrees until heated through. Thawing in the fridge overnight first speeds this up.

How to Prevent Breakfast Burritos from Getting Soggy

When reheating breakfast burritos be careful to not overheat. When eggs are reheated to long it can release moisture making the burritos soggy. Also make sure to add salsa when you are serving the burritos and high content veggies. These items can also release moisture leaving your burritos soggy.

Do I need to wrap each burrito before freezing?

No. Flash-freezing them on a baking sheet for an hour keeps them from sticking together in the freezer bag, so you can skip the foil or plastic wrap.

Can I use homemade tortillas?

Yes. Let the tortillas cool completely before assembling, and let the filling cool tool, so there’s no extra moisture.

Can you warm them up in a toaster oven if you don’t have a microwave?

    1. Carrie Barnard says:

Crystal – Yes, this should work great. I would reheat at 350 degrees F until heated through.

    2. Laurie B says:

We do! The family loves the crunchier outside! They use our homemade salsa on top after cooking.

      1. Carrie Barnard says:

That sounds delicious! I love the crunchy outside, and homemade salsa would be the perfect topping!

  2. Catherine Pelletier says:

I didn’t see anywhere in your recipe where the eggs get cooked. Can you please revise your recipe?

    1. Carrie Barnard says:

Catherine – Step 2 in the recipe states “Scramble all the eggs and set aside in a bowl.” If you have any other questions please let me know – Thank you!

    2. Nicky F says:

Hi it’s right there on step 2 in instructions: scramble all the eggs and set aside.

      1. Carrie Barnard says:

        Thanks Nicky!

  3. Steph says:

Loved how easy they were to make and that they’re customizable. I made it the way the recipe called and liked them, but will add a little more sausage and salsa next time.

      I layered:
Tortilla, Small piece of cheddar cheese, hasbrown(precooked), egg, sausage, Chipotle Aioli sauce.

      Yummy!

Thank you so much Phillip. I’m so glad you enjoyed them and thank you so much for the positive review!

      1. Charlene Gibson says:

If adding hash browns do they need to be cooked first.

      2. Carrie Barnard says:

Yes, I recommend cooking them before adding them into the breakfast burritos. I would sauté them in a skillet in a little bit of oil over medium high heat for 2-3 minutes on each side until they are heated through and browned slightly.

  5. Bobert says:

Thinking about trying this but wondering about other possible additions. Re-Fried Beans, Pinto Beans, Hash Browns or other potatoes. And maybe chopped spinach. Your thoughts ? I guess I could always try and let you know about any epic failures. Looks Good.

    1. Carrie Barnard says:

Yes, you can easily make these with any additions that you love! I would make sure that they are cooked before adding and it should work great!

    2. Janell Stillions says:

      5 stars
Can I make this with homemade tortillas or will they be soggy

      1. Carrie Barnard says:

Thanks for your question! Yes, homemade tortillas will work great. Just make sure they are completely cooled before assembling the burritos, and let the filling cool slightly as well to help prevent excess moisture. They should freeze and reheat beautifully. I hope you enjoy them! ?

  6. Lois Barrett says:

I love your recipes but I hate the fact that all the ads print when I print out the recipe. It takes more paper and ink.

    1. Carrie Barnard says:

If you click jump to recipe and then click on the print button no ads will print with the recipe.

      1. Caitlin Green says:

Wonderful recipe and like the step to freeze them for an hour before packaging them.

      2. Carrie Barnard says:

Thank you so much Caitlin! I’m so glad you enjoy it and thank you for the positive review! Yes, I love flash freezing these burritos for ease in reheating later.

    2. Rhonda Lovin says:

I have a question. Should the burritos be wrapped in anything before putting them in a freezer bag?

      1. Carrie Barnard says:

Rhonda – No I don’t. Once they are frozen for about an hour on the baking sheet it helps them not stick together in the freezer bag.

  7. Isabella says:

What happens if I skip the step of freezing on the baking sheet for an hour?

    1. Carrie Barnard says:

The breakfast burritos stick together in the freezer bag and you won’t be able to heat them up individually.

  8. Rick says:

Would it be ok to mix all the ingredients together rather than layering?

    1. Carrie Barnard says:

      Yes, that would work great.

  9. Elizabeth says:

    5 stars
This recipe was super easy and it tastes great! So helpful for making breakfast that I can take to work with me.

  10. Kaye says:

I have left over sausage and egg mixture. Can I freeze this and make more latter? Thanks

    1. Carrie Barnard says:

Yes, or just make more burritos to freeze.

  11. Ella says:

What is the purpose of the paper towel…? Do you dampen it before freezing or after…?

    1. Carrie says:

The paper towel is to save time when reheating the breakfast burritos as it keeps the tortillas soft when reheating them. I do not dampen the paper towels for this recipe and find that it still works great for keeping the tortillas soft.

  12. Brittany says:

My tortilla became really hard after I heated it up. Any hints on making this not happen? Thanks!

    1. Carrie says:

I wrap it in a damp paper towel when reheating them to prevent the tortillas from becoming hard. I hope that helps!

  13. Teresa Lango says:

Adding ingredients to my grocery list. Also going to add the onion/pepper mix you find in the frozen veggie area of store. I’m not a fan of potatoes in mine, but suggest if you do to look for the Hashbrowns O’brien (has the pepper/onions already in them).

  14. Brandy says:

These look delicious. Will have to add shredded cheddar cheese.

  15. Sheila says:

I luv the griddle what kind and did you get it off amazon? Thanks, luv your videos

  16. mary says:

which kind of hashbrown is the best to use for this recipes

    1. Carrie says:

Mary – I like to use the shredded hashbrowns

  17. Angie Adams says:

when adding hashbrowns, do you cook them first or lay them frozen on burritos and they cook when reheating the burrito up? Please clarify, the rest of ingredients is precooked already, was wondering about hashbrowns if added?

    1. Carrie says:

Angie – I cook all the ingredients prior to adding them to these breakfast burritos so I would cook the hashbrowns prior to adding as well. Thank you and I hope your family loves them as much as mine does 🙂
