- Hard Boiled Eggs – Cooled and peeled

- Dijon Mustard – You can also use yellow mustard

- Slices Bacon – Cook fresh bacon and crumbled or use bacon bites

How to Make Bacon Deviled Eggs

Step 1 – Slice the cooled hard boiled eggs in half lengthwise. Remove the yolks from the eggs and place them in a mixing bowl.

Step 2 – Gently mash the egg yolks with a fork. Then stir in the mayonnaise, dijon mustard, pickle relish, salt and pepper until it’s well combined with the egg yolk filling.

Step 3 – Carefully spoon or pipe the mixture into the center of each egg half.

Step 4 – Garnish with the paprika, chopped bacon and chives.

- 6 hard boiled eggs cooled and peeled
- ¼ cup real mayonnaise
- 1 teaspoon dijon mustard
- 1 Tablespoon Pickle Relish
- salt and pepper to taste

- 3 Slices Bacon cooked and crumbled
- 1 Tablespoon Chives finely chopped

- Mash the yolks with a fork until smooth.

Use a sharp knife to cut the eggs cleanly without tearing the whites. Divide the yolk filling evenly among the egg whites. Taste the filling before adding additional seasoning. Cook the bacon in advance or use leftover cooked bacon. Bacon bits can also be used for a quicker option.Variations
Replace the pickle relish with a small amount of apple cider vinegar or lemon juice for a different flavor. For extra seasoning, try smoked paprika or a small amount of onion powder. Like deviled eggs, everyone has their own way of boiling eggs. Feel free to prepare how you prefer. Boiled eggs can be prepared on the stove top in a large saucepan with running water, instant pot and the oven. Allow them to dry on paper towels before storing.

Peeling eggs can get tricky and can cause your eggs to not look very pleasing. Here are some helpful tips to peel the eggs so your deviled eggs look appetizing.
- Older Eggs – I find that using older eggs make it easy to peel them when hard boiled.
- Chill Eggs – Everyone has their own method to boiling eggs. But I like to place them in a ice bath after baking. This usually causes the shell to peel right off.
- Roll the Egg – After you egg has cooled, gently roll the egg on the counter. This helps to crack the shell making it easy to peel.
- Peel at the Bottom – On the bottom of the egg there is a air pocket. I simply hit the bottom of the egg on the counter which makes it crack. Then start peeling from that air pocket. The shell will come right off.

Yes, these deviled eggs with bacon can be prepared in advance. I like to prepare the hard boiled eggs up to a week in advance. Then place in the fridge.
Then about a day in advance when I am serving, I prepare the eggs. Remove the eggs from the refrigerator and peel, slice and remove the yolk. Combine the yolk with the seasoning, mayonnaise and mustard.
Then add the filling to the halved eggs and place on a serving platter. Cover the stuffed eggs with a plastic wrap and store in the fridge.

Refrigerate the leftovers, covered, for up to 2 days. We like to use a deviled egg container to easily store and to travel with when we are taking to a potluck.
