Ingredients

Ingredients needed for this recipe includes Beef Back ribs, brown sugar, paprika, garlic powder, chili powder, cumin, pepper, salt, BBQ sauce, and water.
  • Beef Back Ribs – Ask the butcher counter for “beef back ribs” specifically; they’re leaner than short ribs but turn tender and flavorful in the slow cooker.
  • Brown Sugar – Balances the smoky spices with a touch of sweetness and helps the rub caramelize under the broiler.
  • Paprika – Adds color and mild, smoky flavor to the rub.
  • Garlic Powder – Adds savory depth without the moisture fresh garlic would add to a dry rub.
  • Chili Powder – Adds warmth and color, not heat — this rub is mild and kid-friendly.
  • Cumin – Adds an earthy, slightly smoky background note that rounds out the rub.
  • Black Pepper – Adds a little bite to balance the sweetness of the brown sugar.
  • Salt – Season to taste if using a saltier store-bought BBQ sauce, since it adds sodium too.
  • Barbecue Sauce – Use your favorite store brand to save money, or try our Homemade BBQ Sauce for less sodium.
  • Water – Keeps the ribs from drying out and creates the base for the flavorful cooking liquid.

A Quick Note on This Cut:

Beef back ribs have less meat on them than short ribs — most of the meat sits between the bones rather than piled on top. That’s exactly why they’re so budget-friendly! Plan on 2-3 ribs per person, and pair them with a hearty side like mashed potatoes or rice so everyone leaves the table full.

How to Make Slow Cooker Beef Ribs

Combining the spices in a bowl with a whisk.

Step 1 – In a small bowl, stir together the brown sugar, paprika, garlic powder, chili powder, cumin, black pepper and salt.

Two raw racks of beef ribs on a metal baking tray, with a white and blue striped dish towel placed beside the tray on a white marble surface.

Step 2 – If your ribs come in a rack, remove any skin from the back of the ribs and cut them into smaller pieces so that they will fit into a crock pot.

A hand sprinkles brown spice rub from a bowl onto two raw beef ribs on a metal tray.

Step 3 – Rub the seasoning mixture onto both sides of the ribs.

A hand pours liquid from a small white pitcher into an empty black slow cooker.

Step 4 – Pour the water into the bottom of the crock pot.

A hand pours barbecue sauce from a glass jar over seasoned beef ribs in a black slow cooker, with a striped kitchen towel beside it on a white marble surface.

Step 5 – Layer the ribs into the crock pot and pour 1 ½ cups of barbecue sauce on top as evenly as possible. Cover and cook on low for 7-8 hours or on high for 3-4 hours, until the meat is fork-tender and pulls away from the bone easily when you press a fork into it. If it still feels tough, give it another 30-60 minutes — the ribs are forgiving and won’t dry out with extra time in the slow cooker.

A metal baking tray holds several pieces of tender Beef Ribs, coated in BBQ sauce. A spatula rests on the tray, while a striped kitchen towel peeks in from the side, highlighting the saucy beef ribs' irresistible appeal.

Step 6 – Carefully transfer ribs to a baking sheet lined with foil. Brush the ribs with the remaining barbecue sauce and juices.  Broil ribs in the oven until the sauce is caramelized slightly. Cut into individual ribs, serve warm and enjoy!

Pro Tips for Perfect Crockpot Ribs

  • Grill – You can also grill the baby back ribs a few minutes on each side instead of broiling them if you prefer.  Don’t skip this step as it adds a ton of flavor to the sauce by caramelizing it.
  • Prepare Ribs – Removing the membrane on the bone side helps seasoning penetrate and improves tenderness.
  • Cooking Time – We usually cook the ribs on low for about 6-8 hours as we start them in the morning & they are ready when get home. Feel free to cook on high if your prefer.
  • Don’t Skip the Broiling Step – Broiling the ribs for a few minutes caramelizes the BBQ sauce and gives the ribs that classic sticky texture similar to grilled ribs.
  • Make Ahead Tip – You can season the ribs with the spice rub the night before and store them covered in the refrigerator. In the morning, place them in the slow cooker with BBQ sauce and start cooking. This saves time on busy mornings.

Flavor Variations

  • Asian Flavor Ribs – Swap BBQ sauce for hoisin, add 2 Tbsp soy sauce, and finish with toasted sesame seeds.
  • Chipotle Honey – Stir 2 chopped chipotle peppers in adobo sauce and 3 Tbsp honey, brown sugar or maple syrup into the sauce for smoky-sweet heat.
  • Spices and Sauces – Feel free to change or add in spices to what you prefer. We have added in ½ tsp of onion powder to these beef short ribs for added flavor. We have even substituted the water for beef broth, apple cider vinegar or red wine sauce.

Slow Cooker Beef Ribs FAQ

Is This Recipe Spicy?

No — the chili powder here adds warmth and color, not heat. This is a mild, kid-friendly rub. If your family loves a kick, stir a pinch of cayenne into the rub or add a few dashes of hot sauce to the barbecue sauce before serving.

Can I Start with Frozen Ribs?

We recommend thawing ribs first before adding them to the slow cooker. This helps them cook evenly and reach a safe internal temperature.

Can I Make with Boneless Ribs

Bone-in ribs deliver better flavor and moisture but boneless ribs can be used in the same timing and will be packed with flavor.

How to Store Leftover Ribs

Store any leftovers in an airtight container for up to 5-6 days in the fridge.

How to Reheat Ribs

We usually reheat the ribs in the microwave but you can also place in a baking dish and reheat in a preheated oven at 350 degrees for about 10 minutes.

Can I Freeze Slow Cooker Beef Ribs?

Yes! Let the ribs cool completely, then place them in a freezer-safe container or bag with a little of the sauce spooned over the top to keep them moist. Freeze for up to 3 months. Thaw overnight in the fridge, then reheat gently in a covered baking dish at 350 degrees until warmed through, about 15-20 minutes.

Why Does This Recipe Only Serve 4?

Beef back ribs are a leaner-meat cut, with more of the meat tucked between the bones than piled on top. Four servings assumes about 2-3 ribs per person alongside hearty sides like mashed potatoes and coleslaw. Feel free to double the recipe (and the barbecue sauce) if you’re feeding a crowd — it fits in most 6-quart slow cookers.
