How to Make Buffalo Chicken Meatballs

Step 1 – In a large bowl combine ground chicken, breadcrumbs, egg, celery, onion, minced garlic, paprika, garlic powder, onion powder and salt and pepper.

Step 2 – Form the chicken mixture into 1-inch meatballs and arrange them on a plate. Use a cookie scoop to evenly make the meatballs.

Step 3 – Pour Buffalo Sauce into crockpot.

Step 4 – Place meatballs in the slow cooker, turning them to coat in the sauce.
Step 5 – Cover and cook for 2 hours on high or 4 hours on low. Cook until meatballs are cooked through and reach an internal temperature of 165 degrees.
Step 6 – Serve warm topped with fresh parsley and enjoy!


Buffalo Chicken Meatballs
Ingredients
For the Meatballs:
- 1 pound Ground Chicken
- ¼ cup breadcrumbs
- 1 large egg
- ¼ cup celery finely chopped
- ¼ cup onion finely chopped
- 2 cloves Garlic minced
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- salt and pepper to taste
For Cooking:
- 1-1 ½ cups buffalo sauce (depending on how saucy you like it)
- 1 Tablespoon fresh parsley chopped (for serving)
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, egg, chopped celery, onion, garlic, paprika, garlic powder, onion powder, and a pinch of salt and pepper. Mix until well combined but do not over mix.
- Form the mixture into 1-inch meatballs and arrange them on a plate.
- Pour the buffalo sauce into the crockpot.
- Gently place the meatballs into the crockpot, turning them to coat in the sauce.
- Cover and cook on high for 2 hours or on low for 4 hours, until the meatballs are cooked through and have an internal temperature of 165°F.
- If desired, garnish with fresh parsley before serving.
