I love making Chicken Gnocchi Soup because I can start it in the morning, come home to comfort in a bowl. I love the convenience of using my slow cooker to make this recipe, because it does all the work.

Ingredients
- Boneless Skinless Chicken Breasts – You can also use skinless chicken thighs. You can also use leftover chicken or rotisserie chicken
- Chopped Vegetables – Celery, Carrot and Onion chop into small pieces
- Minced Cloves Garlic – Learn How to Mince Garlic Cloves. Feel free to substitute with garlic powder
- Dried Thyme Leaves – If you don’t love the taste of thyme, you can use dried basil instead.
- Italian Seasoning – Learn How to Make Italian Seasoning Recipe
- Poultry Seasoning – Adds flavor to this soup
- Salt and Black Pepper – Simple spices
- Chicken Broth – If you are out, see Chicken broth substitutes
- Heavy Cream – You can also use half and half
- Cornstarch – Helps to thicken the soup with the cornstarch slurry
- Gnocchi – We usually buy the refrigerated gnocchi from the pasta section or use frozen gnocchi
- Fresh Baby Spinach – Chop into small pieces. Feel free to also use kale
- Fresh Grated Parmesan Cheese – Optional topping

How to Make Slow Cooker Chicken Gnocchi Soup

Step 1 – Place the chicken, celery, carrots, onions, garlic, thyme, Italian seasoning, poultry seasoning, salt, pepper and chick broth in a crock pot.

Step 2 – Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken shreds easily.

Step 3 – Remove the chicken, shred and stir it back into the crock pot.

Step 4 – In a small mixing bowl, whisk together the cornstarch and heavy cream.

Step 5 – Pour this mixture and the gnocchi into the crock pot. Cover and cook on low for 45-60 minutes or on high for 25-30 minutes until the gnocchi is cooked through.

Step 6 – Stir in the spinach and leave the crock pot uncovered. Let it sit for 5-10 minutes until the spinach is wilted and the soup has thickened. Serve with the grated parmesan cheese on top and enjoy!

- Soup Consistency – The soup will continue to thicken as it sits, so if it’s not quite to the consistency that you prefer, continue to let it sit until it has thickened.
- Shredded Chicken – Shred the cooked chicken with two forks or you can learn how to shred chicken with a hand mixer or stand mixer.
- Gnocchi – Make sure to not add the Gnocchi to early as it could become mushy if it cooks to long.
