There is something to be said about one pot meals during busy seasons of life. Less preparation and less clean up!

If I know we have a bunch of activities and will be gone all day, I throw this meal in the slow cooker and it is a huge time saver.

How to make crock pot mac and cheese:

Brown your ground beef before you put it in the crock pot. Or if you have a Ninja cooking system like I do, just brown it right in the same pot.

Add everything else except the elbow noodles and the cheese. Let the slow cooker do the work!

30 minutes before it is time to eat, stir in the macaroni. Let it cook and then stir in cheese until melted. Yum!

Buy block cheddar cheese and then hand shred it. It will melt more evenly.

You can use any kind of cheese, but I love sharp cheddar cheese in this recipe.

Have you ever wondered can you freeze cheese?  It is simple to do and saves money.

Another time saving tip is to use a small food chopper or food processor to quickly and easily chop onions.

If you do not have one of these, I highly recommend them. They are such a time saver and you make cooking so fast and easy.

I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

Ingredients

  • 1 pound ground beef lean
  • 1/2 small onion chopped
  • 1 teaspoon minced garlic
  • 2 cans chili beans 15 oz
  • 1 cans crushed tomatoes 15 oz each
  • 1 cans diced tomatoes 15 oz
  • 2 cups beef broth
  • 1 tablespoons chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 oz elbow macaroni uncooked
  • 3 cups cheddar cheese hand shredded

Instructions

  • Brown ground beef and put in the crock pot.
  • Add all the ingredients, but the macaroni to the slow cooker. Cook on low for 6-8 hours.
  • 30 minutes before ready to eat, break apart the ground beef.
  • Stir in the macaroni.
  • Cover and cook until soft.
  • Stir in the cheddar cheese until melted.
  • Top with your favorite chili toppings: sour cream, and green onions.

  1. For the chili Mac and cheese the recipe says put elbow in at the beginning and the directions say put in 30 before done. Which is correct and should the elbows be cooked first if only adding for 30minutes at the end.
