- Beef Broth – We used low sodium beef broth or you can also use water

How to Make Slow Cooker Vegetable Soup
- Step 1 – If using ground beef or turkey, cook meat and onions until golden brown.
- Step 2 – Add to slow cooker along with all other ingredients.

- Step 3 – Cover and Cook on low for 4 hours. You can also add Italian seasoning if you prefer.
- Step 4 – Serve hot and enjoy! Salt and pepper to taste.

Instructions
- In a 6?quart crock pot, combine 2 pounds ground beef (browned and drained), ½ medium onion (diced), 3 potatoes (peeled and diced into 1?inch pieces), 16 oz frozen mixed vegetables, 3 cans diced tomatoes (14.5 oz each, not drained), 4 cups beef broth, 2 teaspoons Italian seasoning, 1 teaspoon salt, and ½ teaspoon pepper.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours.
- Serve hot and enjoy!




I made this for the first time last fall after craving both a tomato-based soup I could make with leftover ground beef and an easy slow cooker soup. YOU HAD ME AT “FROZEN VEGETABLES”.
Fast forward 6 months – I made this soup EVERY.SINGLE.WEEK this winter. Sometimes twice per week. Seriously.
I love the way the flavors come together.
I love that I can change up the ingredients and still have a winner every time.
I love that I can make and clean up in less than 30 minutes (shout out to slow cooker liners for making this even easier).
I love that it’s VERY AFFORDABLE.
I made some adjustments and have some recommendations:
1. COOK THE POTATOES AFTER DICING/BEFORE CROCK POT. Even if it’s only for a few minutes in the microwave. Make sure they’re fork tender or close to it before putting in the crock pot.
This is how I now prepare them: Pre-heat the oven, peel & dice potatoes, toss in olive oil & seasoning (I use Retchless Rub Greek seasoning*), spread flat on sheet pan, bake for however long it takes to make the rest of the recipe, toss in crock pot. I don’t set a timer. I have found this timing to work perfectly.
1A. USE SWEET POTATOES. You’ll thank me later.
2. SAUTEE ONION BEFORE ADDING BEEF TO PAN. I also add a little minced garlic. Sauteeing the onion and then adding the beef adds a nice flavor.
2A. ADD SEASONING TO BEEF (& ONION) IN PAN. I used Retchless Rub Fiesta Seasoning*.
3. MIX UP THE CANNED TOMATOES. I found 2x cans roasted diced tomatoes & 1x can diced tomatoes w/green chilies to be a winning combo that added flavor without heat.
4. ADD MORE SEASONING TO CROCKPOT. I used Retchless Rub Monster Burger seasoning*. I didn’t measure any of my seasonings but I never found the recipe to be over or under seasoned after I added different seasonings at each step.
5. PICK UP A LOAF OF ITALIAN BREAD, RICOTTA & PESTO. Slice the bread, spread ricotta & pesto on top. Toast for a few minutes. Serve warm. Runner up: Boursin cheese.
6. ADD SHREDDED CHEESE AS GARNISH. Any kind of shredded cheese. We ran the gamut of cheese this winter. No losers. Only winners.
Easy recipe. Great flavor. Lots of options for variety. We never had a bad batch. It was a hit every time (#1 was an important part of success)

This was easy and so delicious with just a few tweaks. As septuagenarians with taste buds that need to be awakened at every meal, we looked to the extended notes for inspiration. We added garlic as suggested. Then, to boost the broth’s flavor, we decided to add red pepper flakes before cooking. Perfection!

What can I substitute the diced tomatoes with? My family doesn’t like diced tomatoes.
Mallory – You can try using about 1 to 1½ cups tomato sauce for every 14.5-oz can of diced tomatoes. It will make the broth smoother but still tomato-rich without the texture of diced tomatoes. Hope this helps. Let me know how it turns out if you try this.
Would this recipe freeze well?
Susan, yes the leftovers will freeze well. When reheating, defrost out fully and then be careful when reheating so that the potatoes do not get too soft.
I’ve made this delicious soup twice and found that it’s better with 2 cans of diced tomatoes instead of three cans . That extra measure of tomatoes actually dominates the flavor of the soup instead of enhancing it . Also, be sure to cut the potatoes to the size as recommended (one inch ) , any larger and they finish up still hard . I’ll continue making this delicious soup since it’s a family favorite . This soup is delicious! I normally cook it on the stove if I’m short on time. I often add chili powder to make it a Mexican soup. Sometimes I add both pasta AND potatoes! I love adding fresh parsley or cilantro. Also great with cheese dumplings! Yum!

Made this with Ground Turkey meat as this was what I had on hand. I only made half recipe since its only me. Could you please explain how Crockpot Vegetable Soup is different than Hamburger Soup?
Vegetable stew is made with stew meat or chuck roast cut into small cube-shaped pieces. Don’t get me wrong they are both good.

I generally followed the recipe but made a few alterations. I started by browning some onions, and also added an extra can of diced tomatoes instead of the water. I also added turnip instead of green beans. And for a richer, thicker soup, I used condensed tomato instead of a tomato cocktail. The flavors were hearty, and between the cajun seasonings and a thick red-chili-cumin curry paste I added built a little heat. Awesome!

I love this soup! So easy and so delicious! My grandson asks for this every time he visits and his 2 year old brother gobbles it up! I always feel good when serving this because it has so many good things in it. I sometimes add kidney or white beans or black eyed peas (frozen) to the pot.
I like to make this when grocery money is low, when I need to make a pantry challenge, or when comfort food is calling my name!
I just throw the ingredients in and let “him” do all of the work. No stress!

I make something so similar to this we just call it hamburger soup. One ingredient we use each time is canned tomatoes/corn/okra..it absolutely pops with flavor, the okra really brings it out. With each bowl served up I put a pad of butter in. Perfection!! We serve it with hot fresh baked yeast rolls.

Well… I did it again! I posted my comment on the WRONG RECIPE! Some days… I tell ya…
This soup is super easy to put together and makes an excellent lunch throughout the week. I opted to use fat-free chicken stock in place of the vegetable stock just for personal taste and I used petite gold potatoes and kept the skin on. I chopped all my veggies the day before (including the potatoes. Just put them in an air-tight container and cover with water and store in the fridge). Then in the morning I dumped everything into the slow cooker and cooked on high for 4 – 4 1/2 hours. By lunch time it was ready! I stored in single serving sized containers in the fridge to reheat for a healthy & delicious lunch!

I also wondered what seasonings to use as it shows them being put in but not listed on ingreds and it does need seasonings. I looked up on another recipe and it said salt, pepper and a bay leaf. It is flat without seasonings..
