How to Make Chicken Fried Rice

Step 1 – In a large skillet or wok over medium high heat on the stovetop, sauté the chicken in the sesame, vegetable oil, kosher salt and black pepper or white pepper. This only takes a few minutes so it is super fast and easy.

Step 2 – Put the chicken aside on a separate plate once this is cooked.

Step 3 – Add the carrots and peas to the pan and saute. Push them to one side of the pan so you will have room to scramble the eggs.

Step 4 – Now it is time to add all that delicious chicken back to the skillet to stir fry. Add the day-old rice and seasonings and stir to combine.

Ingredients

  • 2 boneless skinless chicken breasts (diced)
  • 2 tablespoon sesame oil
  • 2 tablespoon vegetable oil
  • 1 cup frozen peas and diced carrots blend
  • 3 larges eggs (lightly beaten)
  • 4 cups cooked rice
  • 3 tablespoon soy sauce
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 3 green onions (sliced)

Instructions

  • Heat 2 tablespoons sesame oil and 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 2 diced boneless skinless chicken breasts and cook for 4–6 minutes until fully cooked. Remove the chicken and set aside.
  • Add 1 cup frozen peas and carrots to the skillet and sauté for about 2 minutes.
  • Push the vegetables to one side of the pan and pour in 3 lightly beaten eggs on the empty side. Scramble the eggs until cooked.
  • Return the chicken to the pan, then add 4 cups cooked rice, 3 tablespoons soy sauce, ½ teaspoon salt, and 1 teaspoon black pepper.
  • Stir and sauté for 3–5 minutes until everything is heated through.
  • Top with 3 sliced green onions and serve immediately. Enjoy!

  • Add in Nuts – Add in chopped peanuts or cashews for some crunch. We also like adding in toasted sesame seeds.
  • Remove the chicken – You can also eat this fried rice without any chicken. It will taste amazing.
  • Soy Sauce Substitution – You can substitute dark soy sauce for coconut aminos or tamari.
  • Change Meat – Instead of making this chicken use leftover ham, steak, or ground beef.
  • Spices – The addition of 1 teaspoon of Mince Garlic Cloves is a great idea. You can also add in garlic powder if you do not have fresh garlic.

    I will try this recipe tonight. When I don’t have leftover rice I cook the rice and put it in the freezer for 45 minutes. It comes close to day old rice.

    I was surprised that an onion wasn’t on your list. In Habachi restaurants they always cut one up after making the volcano,lol. It adds a little crunch and taste. I velvet my chicken a couple hours ahead also.
